Grape, Honey and Yogurt Pops

You can use a combination of vanilla and honey Greek yogurt in these pops. Makes 8 standard size popsicles
Yield: 4-8 servings

Ingredients

  1. 1 pound red or black seedless California grapes, rinsed and stemmed
  2. 2 tablespoons sugar
  3. 1 tablespoon honey
  4. 1 container (16 oz.) vanilla or honey Greek yogurt or a combination

Instructions

  1. Puree the grapes in a food processor or blender (you’ll have about 2 cups.) Transfer to a medium-size pot and bring to a boil. Boil the grapes, stirring occasionally, until the mixture has thickened and reduced to about 1 1/2 cups, about 10 minutes. Transfer to a bowl, stir in the sugar and honey and let cool to room temperature.
  2. Fold in the yogurt just until nicely swirled, then spoon into popsicle molds. Cover with foil, insert popsicle sticks and freeze for 4 to 6 hours or until set.

My 4 year-old’s favorite color is purple, so we made these on a day he was home sick. We used red grapes, and the popsicles didn’t come out nearly as purple as the picture (more of a red-purple). Also, the texture is a bit strange- a ton of shredded grape skins throughout the popsicle make it kind of unpleasant. I would recommend finding a recipe with grape juice or straining your grape purée before cooking it down. I don’t think we’ll make these again.
