Donut Ice Cream Sandwiches

Ingredients

  1. 8 ounces semisweet chocolate bars, broken up into pieces
  2. 8 glazed donuts
  3. 2 pints salted caramel ice cream, softened
  4. 1 cup rainbow sprinkles

Instructions

  1. Place the chocolate in a glass bowl and melt it over a double boiler (or in the microwave) until completely smooth. Set aside.
  2. Slice the glazed donuts in half horizontally. Add a large scoop of the ice cream to the bottom half of each donut and use an offset spatula to spread the ice cream to the edges. Press on the top halves of the donuts and roll the sides in the sprinkles. Drizzle the sandwiches with the melted chocolate.
  3. Place the sandwiches on a parchment-lined baking sheet and freeze until the ice cream is firm, at least 4 hours. At this point, enjoy the sandwiches or wrap individually in plastic wrap and freeze until ready to eat.

I haven’t tried this recipe although it looks delicious. I’m just wondering if there’s some way to make it with less calories. Like maybe cuttting more of the donut off  or different sprinkles. Not sure I want to lose the taste of ice cream by using diet.  Any suggestions?

These are delicious! Simple & my kids & grandkids LOVED them! I loved them too. Doughnuts & ice cream? Add sprinkles…. YUM! I did two types of ice cream….coffee for grown ups & rocky road for kiddos……sooo good!
