Date Cream Soda Float

Molly was introduced to date honey in her travels to Israel and fell in love. It is not quite as sweet as bee honey and lends a lovely dark date flavor. She pairs this with her no-churn frozen yogurt and seltzer water to create a cream soda that’s out of this world.

Ingredients

  1. 1 1/2 cups (360 grams) cold heavy cream
  2. 1 1/2 cups (340 grams) cold whole-milk plain Greek yogurt
  3. 1/4 teaspoon kosher salt
  4. 1 (14-ounce) can cold sweetened condensed milk
  5. 1/4 cup (80 grams) date syrup (or silan)
  6. 1/4 cup (60 grams) half-and-half
  7. 1 1/2 cups (240 grams) chilled seltzer water

Instructions

  1. To make the no-churn frozen yogurt: In a stand mixer fitted with the whisk attachment, beat together the heavy cream, yogurt and salt to stiff peaks. With a rubber spatula, fold in the condensed milk, ensuring that it incorporates fully (otherwise you’ll get ice bits). Scrape into a loaf pan or large ice cream container. Freeze for at least 4 hours. (Makes about 1 1/2 quarts.)
  2. To serve: In a liquid measuring cup, whisk together the date syrup and half-and-half until smooth and combined.
  3. Into two serving glasses, divide the creamy date syrup between the glasses. Add a scoop, or two, of frozen yogurt to each. Fill each glass with seltzer water. Drop a straw into each and enjoy immediately.

It was different but very yummy! Something different than a root beer float. Easy to make too!
