Ingredients
- 8 ounces chopped feta cheese
- ¾ cup Greek yogurt
- 1 clove garlic, minced
- ½ teaspoon lemon zest
- freshly ground black pepper to taste
- 3 tablespoons olive oil, divided
- 1 tablespoon minced oil-packed dried tomatoes
- 1 tablespoon pine nuts
- 1 tablespoon minced fresh parsley
Instructions

- Combine feta cheese, Greek yogurt, garlic, lemon zest, and black pepper in a food processor.

- Pulse several times to combine. With motor running, slowly drizzle in 2 tablespoons olive oil until dip is smooth and creamy, approximately 1 minute, scraping down the sides of the bowl as needed.

- Transfer mixture to a bowl or onto a plate and top with sun-dried tomatoes, pine nuts, and parsley. Drizzle with remaining olive oil and serve.

Fabulous, I didn’t have lemons so I used lime zest. Worked fine.
I took this dip to a party and it was totally gone. Some guests loved it so much they placed the remaining dip on their flank steak. You don’t have to wait for it to thicken. The thickness will partially depend on how long you let the processor run. After drizzling in the oil I stopped the food processor and it was so thick it was almost solid. After letting it run the full minute it was quite thin. I think if you don’t have time to let it sit to thicken you can just cut back on the processing time to get your desired thickness. Even though feta is quite salty, I did find it necessary to add a pinch of salt, but that may have been because of the brand of feta I used. I would recommend taste testing it before adding any salt.
I liked the flavor. However it never thickened. I am not sure what happened. Any ideas?
