Ingredients
- 4 tablespoons unsalted butter
- 2 tablespoons light brown sugar
- 2 peaches, halved, pitted, cut into eighths
- Pinch cinnamon, plus for garnish
- 1 pint vanilla ice cream
- 1 cup milk, very cold
- 8 vanilla wafer cookies, crumbled
Instructions
- Melt the butter in a medium skillet over medium heat until it begins to brown. Add the brown sugar, peaches and a pinch of cinnamon and cook, stirring occasionally, until the peaches are soft, about 10 minutes. Cool completely.
- Put the ice cream and milk in a blender; add the peach mixture and blend until smooth. Transfer to mason jars or tall glasses. Top each with some crumbled cookies and a pinch of cinnamon. Serve immediately.

Delicious, but you don’t need the milk. I didn’t put much, and it was still not near as think as we would have liked. Next time, we will cut back on the butter amount and the milk in an effort to make thicker. The flavor is wonderful! Didn’t have vanilla wafers or shortbread cookies, so I chopped up some graham crackers. Yum.
It it rich? Yes. Is it sweet? Yes. But soooooo delicious it’s all worth it. We love topping it with crumbled shortbread cookies, because there’s not enough butter or sugar in it already.
Too much butter, too sweet (add sugar to ice cream?) and not thick enough for me. Skip the milk? Maybe just simmer the peaches in a little liquid before adding to ice cream? Or just buy peach ice cream.
It is yummy and I love to make them.

Okay, if you are into a mild flavor, this totally works. However, I found that about a 50% bump in vanilla ice cream gives this a bit more of what I wanted. Still, the cookie crumble topping is genius! DO NOT SKIP THAT PART!
Yum! But needs a little tweaking. First, either cut the butter by half-ish or at least don’t add it all to the blender mixture. And it needs a little more vanilla ice cream. Great flavor though. And the crunchy wafers are a great addition.
