Ingredients
- 1 1/2 pounds frozen strawberries
- 1 1/4 cups rum
- 1/2 cup fresh lime juice
- 1/2 cup Simple Syrup, recipe follows
- 1 tablespoon grated ginger
- Fresh strawberries, sliced, for garnish
- 1 cup sugar
Instructions
- Combine the strawberries, rum, lime juice, Simple Syrup and ginger in the carafe of a blender and puree until smooth. Pour into frozen drink glasses and garnish with sliced strawberries. Serve immediately.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

Not bad, but I think the ginger came out a little too strong. I would do half a table spoon.
Loved it. Since we were by the pool and couldn’t use glass, we drank out of red plastic cups and used mint sprigs instead of strawberries for garnish. Luckily, someone knew how to correctly make a simple syrup because the only thing the recipe said was “1 cup sugar” and we all knew something was wrong with THAT.
really refreshing, only made 1/2 the recipe and used spiced rum.
