Strawberry Daiquiri Bites

Ingredients

  1. 1 pint strawberries, hulled with a melon baller or paring knife to make a small hole
  2. 1 3/4 cups rum
  3. 3 tablespoons demerara sugar
  4. Zest of 1 lime
  5. Whipped cream, for garnish

Instructions

  1. Put the strawberries in a mason jar with the rum and soak for 15 minutes in the fridge.
  2. In a small bowl, combine the sugar and lime zest.
  3. Remove the strawberries from the jar and cut a small slice from the bottom of each so they stand up; reserve the slices.
  4. Top each strawberry with some of the whipped cream and sprinkle with the lime sugar. Cap each strawberry with a reserved strawberry slice.

I used vodka and made my own whipped cream and added lemon zest to it. So cute, easy and quick. I didn’t make enough of them.

It’s very pretty recipes, but I would ditch the regular granulated sugar in all the recipes and use about a jigger in a half of grenadine syrup for al daiquiris. This is my Recipe:  Using a blender;  Fill blender with ice cubes to near top of blender then add  either a couple of squirts of rum extract about a tablespoon full., Then use about a jigger to a jigger in a half of grenadine syrup depending on your taste.  It gives it a cherry kind of taste.   Then squeeze a half of a lime onto top of ice,  then crush ice in blender until it has the consistency of a frozen slurry. Then put strawberries and cherries into pretty glasses on top of daiquiris and a washed lime wedge on side of each daiquiris glass. This is my health diabetic version, because diabetics can have strawberries and cherries, just not that granulated sugar.  Also Cherries are good for the gout and is a healthy nonalcoholic drink that a diabetic can enjoy without punch from real heavy alcohol by using rum extract instead for the flavor of it!   Enjoy !
