Hemingway Daiquiri

Forget everything you think you know about daiquiris. The original daiquiri is not something you get out of a slushy machine, but a rum drink with the perfect marriage of bitter citrus and sweet cherry. Sometimes you can add an egg white for frothiness, but you can never go wrong serving it straight up. A classic daiquiri is a sipping drink and is made to take time to enjoy.

Ingredients

  1. 2 ounces light rum
  2. 1 1/4 ounces freshly squeezed grapefruit juice
  3. 3/4 ounce freshly squeezed lime juice plus 1 lime slice, for serving
  4. 1/2 ounce maraschino liqueur, such as Luxardo
  5. 1/4 ounce Simple Syrup, recipe follows
  6. 1 cup sugar

Instructions

  1. In a cocktail shaker filled with ice, add the rum, grapefruit juice, lime juice, maraschino liqueur and Simple Syrup. Shake well to combine. Strain into a chilled cocktail glass and garnish with a lime slice.
  2. Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator for up to a month.

This is very refreshing. I knew my limes were ‘full bodied’ and I cut back the lime juice a bit. This reminded me of a very smooth Margherita, but much smoother and sophisticated. It is easy to make. Easy to drink. I always use freshly squeezed or not–from-concentrate juices…the latter have slightly less brightness and flavor, but a good convenient option. I also freeze my juice in 8 ounce blocks and thaw when needed which saves money, too.

A very refreshing cocktail but I highly recommend using fresh squeezed grapefruit juice! We did two versions one with and one with bottled… fresh squeezed was hands down the winner! Also a wonderful alternative to a breakfast mimosa. Salud!
