Ingredients

  1. 1 1/2 tablespoons vegetable oil
  2. 1 large egg, beaten
  3. 6 scallions, roughly chopped
  4. 2 teaspoons curry powder
  5. Kosher salt and freshly ground black pepper
  6. 4 cups cooked rice
  7. Sesame oil, for drizzling

Instructions

  1. Heat the oil in a large nonstick skillet over high heat. Add the beaten egg and swirl the pan; let set, then transfer to a plate. Add the scallions to the pan along with the curry powder and pepper to taste; stir-fry 2 minutes. Stir in the cooked rice; spread in an even layer and cook 3 minutes. Add the egg, and salt to taste; stir to break up the egg. Drizzle with the sesame oil.

I loved this fried rice.  I used basmati rice that I made the day before so it was cold and ready to fry.

I followed the recipe exactly–with the addition of an extra egg, some frozen green peas, and a lot of chopped green onion.  This is the only fried rice I will make.  I baked some very thick pork steaks in homemade Asian sauce to serve with the fried rice.  I plan on using it with shrimp, chicken, and beef in the future.  This recipe was so simple and delicious.

Very easy. I always thought fried rice would be difficult. I substituted brown rice and olive oil and added a splash of soy sauce! Yum

Good. Basic. I personally thought this needed triple the curry, so after making the recipe as-is, I did add a cop more palm fills of Madras Curry. I also thought the addition of soy sauce was a great suggested. This would be great with chicken and/or shrimp.

This was excellent. i had some jasmine rice in the fridge that needed using up and this came together in less than 10 minutes, I added a little soy sauce while frying the rice and served with a squeeze of lime and a bit of Trader Joe Sweet Chile Sauce
