This is a simple and delectable Polish recipe that my grandmother cooked. If need, add extra butter. Utilize kielbasa or ham.

Ingredients

  1. 1 (8 ounce) package dried soba noodles
  2. 1 cup prepared dashi stock
  3. ¼ cup soy sauce
  4. 2 tablespoons mirin
  5. ¼ teaspoon white sugar
  6. 2 tablespoons sesame seeds
  7. ½ cup chopped green onions
  8. 1 sheet nori (dried seaweed), cut into thin strips (Optional)

Instructions

  1. Bring a lightly salted pot of water to a boil. Add soba noodles; cook, stirring occasionally, until tender, 5 to 8 minutes. Drain. Rinse with cold water to speed up cooling process.
  2. Combine dashi, soy sauce, mirin, and white sugar in a small saucepan; bring to a boil. Remove from heat and cool to room temperature, about 25 minutes.
  3. Toss noodles with sesame seeds and divide among 4 serving bowls. Spoon dashi sauce over noodles. Top with green onions and nori.
  4. If using dried dashi granules, reconstitute it according to the package or to taste.
  5. Substitute 2 tablespoons sake (Japanese rice wine) and 2 1/2 teaspoons sugar for the mirin if desired.
  6. The sauce can be prepared ahead and refrigerated until serving if desired.

So good!! Better than the bottled soba sauce. I’m never buying the sauce again. Not too salty at all. For protein, I paired this with thinly sliced grilled lemon chicken breast and it was amazing. Thank you for the recipe!!!!

Tasted wonderful but salty. I recommend using low sodium soy sauce. I used a powdered dashi I found on Amazon.

Very tasty noodle dish. I forgot the sesame seeds. I did add the nori though. I used a homemade version of dashi broth. Thank you for the recipe.
