Ingredients
- ¼ pound chopped prosciutto
- 2 cups heavy cream
- 1 (28 ounce) can crushed tomatoes
- 1 fluid ounce vodka
- 1 (7 ounce) jar roasted red peppers
- 2 tablespoons chopped fresh parsley
- 2 teaspoons garlic powder
- 1 ½ teaspoons white sugar
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- ⅛ teaspoon crushed red pepper flakes (Optional)
- 1 cup grated Parmesan cheese
- 1 pound rigatoni pasta
- ¼ cup green peas
Instructions
- Drain roasted peppers, reserving a small amount of the liquid. Cut peppers into strips.
- Combine prosciutto, cream, crushed tomatoes, vodka, roasted peppers with reserved liquid, parsley, garlic powder, sugar, salt and black pepper, and crushed red pepper in a saucepan. Cover. Cook over medium heat, stirring often, until the sauce comes to a boil. Reduce heat, and simmer for 30 minutes.
- Meanwhile, cook pasta according to package directions. Drain, and transfer to a large serving bowl.
- Stir cheese into the sauce. Stir sauce into rigatoni and top with peas.

Good sauce of it’s type. If you are not familiar with it, it is light, a little sweet and no heavy vodka taste. Not mentioned but cook the peas, lol.
Tastes like fancy Italian, but I deviated a bit. I sauteed onions and minced garlic in olive oil, then added the other ingredients as the recipe calls for. And this is vegetarian because it doesn’t have prosciutto. Delicious meal!
This was a great recipe. We all loved it and I will definitely make it again. I did not have proscuttio, so used bacon instead and it was till good. The sauce is thin, but it seemed to be okay when placed on the pasta. It did make a lot of sauce, so I froze half for later.
This is an incredible dish, restaurant quality! I did not think it was hard either. The roasted peppers give it a unique depth of flavor compared to a typical vodka sauce recipe. I only used 1/2 cup Parmesan cheese & was still delicious!
Only made one change, added Italian hot sausage. Great recipe and easy to follow. Highly recommend it!
Loved this! Changes I made were use fresh garlic, use spicy Italian sausage instead of prosciutto, double peas, and use 1 cup heavy cream and 1 cup half & half. Still super creamy!

It’s ok, but missing something…maybe sun dried tomatoes? Maybe more garlic? Fresh or roasted garlic? Something just wasn’t 100% satisfying about this dish.

I have made this recipe, exactly as directed, on many occasions often when we have dinner guests. I serve it with home made baguettes followed by a light dessert. A simple meal which everyone loves, and most have second and even third helpings.
We loved this, it was something different than regular old spaghetti sauce but still simple and fairly quick to throw together! I did puree the red peppers in my food processor instead.
This is the easiest rigatoni recipe i ever made. The bf LOVES it, and can even make it himself, which is a plus. I have made it 3 times in the past 6 weeks.
Delicious. I didn’t use prosciutto, but did serve with Italian sausage. Also, I used fresh garlic instead of dried. The second time I made this dish I forgot to put the Parmesan in and it still tasted great.
