Vegetarian Mushroom Tacos

You can quickly prepare these mushroom tacos using your preferred mushrooms. Ideal for vegetarians or situations where you don’t want to prepare meat.

Ingredients

  1. 2 tablespoons butter, or as needed
  2. 4 cups finely chopped mushrooms
  3. 1 (1 ounce) package taco seasoning
  4. 8 (6 inch) corn tortillas, or as needed
  5. 1 head iceberg lettuce, shredded
  6. 1 tomato, diced
  7. 1 onion, diced
  8. ¼ cup guacamole, or to taste
  9. ¼ cup sour cream, for topping
  10. ¼ cup taco sauce, or to taste

Instructions

  1. Melt butter in a saucepan over medium heat. Add mushrooms and cook until soft, 5 to 7 minutes. Drain excess butter and return to heat. Add taco seasoning and stir to combine, about 2 minutes more.
  2. Serve each tortilla topped with a few tablespoons of mushroom mixture, shredded lettuce, tomato, onion, guacamole, sour cream, and taco sauce.
