Tomato Basil Salmon

For a weeknight supper, this simple salmon recipe is ideal. Serve with a glass of pinot noir and a side of sauteed spinach.

Ingredients

  1. 2 (6 ounce) boneless salmon fillets
  2. 1 tablespoon dried basil
  3. 1 tomato, thinly sliced
  4. 1 tablespoon olive oil
  5. 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a piece of aluminum foil, and spray with nonstick cooking spray. Place the salmon fillets onto the foil, sprinkle with basil, top with tomato slices, drizzle with olive oil, and sprinkle with the Parmesan cheese.
  2. Bake in the preheated oven until the salmon is opaque in the center, and the Parmesan cheese is lightly browned on top, about 20 minutes.

I used fresh lemon basil and Thai Basil and layered that over the salmon, then topped with the sliced tomato and fresh parmesan. Turned out pretty good! Will make again because it was simple and have the ingredients growing in the garden!

This is a good, healthy way to enjoy fresh garden tomatoes! I did sprinkle some grated Parmesan in the baking dish before laying the salmon down; sprinkled some garlic pepper on top, and turned oven up to broil for last 5-7 minutes of the 20 min baking time – all minor changes. Added a little salt, pepper and garlic powder to taste along with the basil. Also followed the suggestion of broiling it for a bit to brown up the top a bit. My husband (a professional line cook for four decades) LOVED it! This is a great meal for just two people. I paired it with some Garlic and Herb rice, and a simple salad. Delicious!

Was very good. Made for my mother who loves tomato but is “meh” for salmon. She really liked it. I normally don’t like putting veggies and such on top of fish as it slows the cook time and parts of the fish cooks unevenly. The olive oil kept things moist and really grabbed the basil flavor.

Delicious, excellent for hot weather. Followed the recipe as written, using Arctic char fillets and fresh basil, except that we didn’t oil the aluminum foil. We never do … we prefer it if the skin sticks to the foil.

This was very good! Hubby raved about it. Think I’ll dice up the tomato next time so I have a better chance of tasting it in each bite. I did throw on just a bit of garlic powder first, followed by the other ingredients. Hubby said, “This is restaurant quality.”

Followed suggestions listed – seasoned salmon with garlic powder, salt, pepper, then added parmesan, then layered fresh basil, tomato, olive oil, and more parmesan. Overall it could’ve used MORE flavor. Maybe using dried basil as indicated would have helped, or just more seasoning. But definitely worth trying again!

Best salmon and it looks so elegant. Hardest thing is slicing a tomato! Perfect on my diet. While I love the recipes calling for soy sauce, maple syrup, etc. and other marinades, the salt isn’t good for me. This is low salt, no sugar and still delicious. I get complements every time. Thanks!
