Ingredients

  1. cooking spray
  2. 1 pound ground beef
  3. 1 (16 ounce) bag frozen whole-kernel corn with red and green bell peppers
  4. 1 (12 ounce) can black beans, rinsed and drained
  5. 1 small onion, diced
  6. 1 clove garlic, minced
  7. 1 (1 ounce) packet taco seasoning mix
  8. 1 (12 ounce) bag shredded Mexican cheese blend
  9. 1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots)
  10. 1 (12 fluid ounce) can enchilada sauce

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Prepare a 9×13-inch baking dish with cooking spray.
  2. Cook ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add in frozen corn, black beans, onion, garlic, and taco seasoning mix to ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
  3. Combine ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the potato nuggets; stir to combine.
  4. Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour remaining enchilada sauce over the potatoes.
  5. Bake in the preheated oven for 40 minutes. Sprinkle remaining cheese over the casserole and return to the oven until the cheese is melted and bubbly, about 5 minutes more.
  6. Some kids don’t like onion or garlic; these can be omitted.

This was a quick and easy recipe that I made nearly as written. For example, my can of black beans was 15.25 oz, enchilada sauce 10 oz, and I used a full regular bag of tator tots. I did not realize it was a 12 oz bag of tots until after. Finally I used regular corn because I could not locate frozen corn with peppers at 3 different grocery stores. When preparing I did sauté my onions and then cooked my ground beef and added the garlic. I then mixed everything together as the recipe states. After pouring the enchilada sauce on top, I felt it could probably use more. The amount of sauce did not cover the casserole (even if I hadn’t accidentally added too many potatoes). Finally I did add extra cheese when topping at the end. The end result was just okay, my family wasn’t in love but didn’t hate it. They rated it a 3-4.

This was good. Easy and tasty. I put the tater tots on top, then enchilada sauce, & shredded cheese because I wanted the tots to be crispy, which I doubted if they were mixed in with the beef & veggies.

I hate to say I made this, because I changed it so much, but I had left overs I needed to get rid of. It turned out really good. And I will definitely make it again. First of all, I did not have any tater tots so I used up some russet potatoes that were getting old by shredding them and layering them in a flat pan. I baked them at 375 for about 30 minutes until they were crispy. I then ground up some left over rib eye steak and pork roast and used these instead of the hamburger. Because this meat was already cooked, I did not need to cook in step 2. I just put a tablespoon or 2 of vegetable oil in a skillet and cooked the onions and garlic, along with some chopped red, green and yellow bell peppers until they were soft. Mixed it all together as called for in the recipe. It turned out great. This would probably be really good with jalapenos for those that can tolerate hot and spicy.

My husband and I loved it just the way it was. I was out of regular enchilada sauce, but I used a can of verde sauce and it tasted great! It was a 28 oz can so I took the liberty of adding a little more than required so it wouldn’t dry out. It probably would’ve been fine.

This was easy to make and pretty tasty. I didn’t have enough tater tots, so used potato pom poms instead – I think the tater tots would have been better as they would have provided more texture. Didn’t rate 5 stars as I felt it was lacking something – didn’t seem hearty enough as a meal. I think it has good potential though, and I might try it as a filling for burritos with salad.

Whole family loves it, Kids and Grands and everything in between. Occasionally will add a pound of sliced mushrooms when browning onions and garlic to a stretch it even farther when extra kids are visiting.

It was a hit. Mine was meat heavy (hubby likes meat), and probably tater tot heavy too. I didn’t have the size called for, so I estimated. I liked the green chili idea, but didn’t have any so I used a can of diced tomatoes with chilis. I used less cheese (hubby again), but it was tasty. I ate leftovers with sour cream and enjoyed it even days later.

I feel like I made this once long ago and didn’t care for but I have tried it again about 8 months ago and then few times since and we love including this into our quick, weeknight rotation. I made exactly as is. We really like this one.! I use homemade taco seasoning from this site. And we love to add toppings like sour cream, fresh avocado, black olives, green onions, etc. great recipe!!
