Taco Lettuce Wraps

tacos made of lettuce and stuffed with corn, black beans, tomatoes, and ground turkey that has been spiced up. For more heat, include thinly sliced jalapenos!

Ingredients

  1. 1 pound ground turkey
  2. 1 (16 ounce) package frozen corn
  3. 1 (15 ounce) can black beans, rinsed and drained
  4. 1 (14.5 ounce) can diced tomatoes
  5. 1 (1 ounce) package taco seasoning mix
  6. 6 romaine leaves, or as needed, rinsed and dried

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Stir in corn, black beans, diced tomatoes, and taco seasoning. Bring to a simmer and cook until heated through, 10 to 12 minutes.
  2. Lay lettuce leaves on a flat surface and fill with turkey and bean mixture.

Loved fixing this recipe. So easy. I used ground beef and substituted black olives for the beans. Didn’t use the romaine leaf, just put onto a plate with some taco rice, cheese, salsa and sour cream on top. Was a real hit.

I would also add sour cream and diced avocado or guacamole and some fresh salsa or jarred whatever’s on hand.

This recipe was delicious! It was super easy and ready fast! I had to substitute pinto beans (out of black beans) drained but not rinsed (the recipe doesn’t specify). I only had bagged lettuce, so I turned it into a taco salad. Topped lettuce with the taco mixture, added shredded cheese, crushed tortilla chips, and salsa. So so good!

it was super easy instead of using lettuce I cut red and yellow peppers in half and baked the peppers until soft. 5 minutes and stuff the peppers with the taco mixture

Really good and very easy!! Great for lunch or a hectic weeknight dinner!! Used ground beef, used canned corn vs frozen and used Rotel tomatoes. I also chopped a few jarred, sliced jalapeños for some heat! These were great! I also made Spicy Quesadilla Sauce from this site to drizzle over each wrap! Yum!! To make it go further – might consider making a batch of cilantro lime rice and add a spoonful to each leaf. Didn’t this time but might next time! I’m grateful to have found this and would make again! Thank you!

I liked the recipe, but I blanched the leaves a little to make them fold better, otherwise they would crack and spill contents.

We liked everything about this recipe except for the romaine leaves. I think it would be much easier to eat using either butter lettuce or head lettuce leaves which would “cup” the filling so it won’t fall out. Otherwise, delicious and so easy !

This was a delicious recipe. I did find it needed a bit more punch so I added some taco sauce as well as hatch fire roasted chilis. I found lettuce bowls at the market rather than the romaine leaves and they were perfectly sized and shaped. I served them with a dollop of sour cream which made them even more delicious. This recipe is a definite keeper and I will be serving them again.

Delicious. Easy and Healthy. used my own taco seasoning and fire roasted tomatoes. The packaged seasoning stuff has unnecessary ingredients. Topped with chopped tomatoes and a little cheese. Love the use of romaine instead of taco shells.

In lieu of taco seasoning, use Rotel, used ground chicken and minced leftover Italian sausage and used my own homemade frijoles

This was absolutely delicious!! It came out looking exactly like the picture. My family loved it and wants me to make again. Turkey can be a bit dry, so I will say you need more seasoning than listed. I added garlic and onion powder, onions, chicken stock, a little salt and pepper. I used 2 pounds of turkey instead of one because turkey shrivels up a lot. Extremely easy and quick to make. Thanks so much for the newly added recipe!
