Ingredients

  1. 2 pounds lean ground beef
  2. 2 (1.25 ounce) packages taco seasoning mix
  3. 4 cloves garlic, minced
  4. 1 tablespoon chili powder
  5. ½ teaspoon cayenne pepper
  6. ½ cup water
  7. cooking spray
  8. 18 (6 inch) corn tortillas
  9. 1 (24 ounce) jar salsa
  10. 1 cup sliced green onion
  11. 1 (16 ounce) container sour cream
  12. 1 ½ cups shredded Cheddar cheese
  13. 1 ½ cups shredded Monterey Jack cheese

Instructions

  1. Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly browned; drain. Season with taco seasoning, garlic, chili powder, and cayenne pepper. Stir in water, reduce heat to low, and simmer for 10 minutes.
  2. Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease the bottom of a 9×13-inch baking dish.
  3. Place 6 tortillas into the prepared baking dish. Spread 1/3 of the salsa on top of the tortillas. Spread 1/2 of the meat mixture evenly over the salsa. Sprinkle with 1/2 of the green onions. Drop 1/2 of the sour cream randomly over the green onions. Top with 1/2 cup Cheddar and 1/2 cup Monterey Jack cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa, and sprinkle with remaining cheese.
  4. Bake in the preheated oven until golden brown on top and cheeses are melted throughout the layers, 30 to 45 minutes.

I think and the family thought that there was too much chili powder and too much cayenne pepper. If I ever make it again I will cut those Ingredients in half. Other than that it was not a bad meal.

OMG this was deeeelicious! Halved the recipe and cooked it an 8×8 and turned out AMAZING. Followed the recipe as written but I’ll add a little extra sour cream next time. Perfect for potlucks and definitely a keeper.

I made this for Cinco de Mayo last year and I’m making it again this year. It is always a big hit with everyone. I added sliced black olives and jalapeno slices and served the sour cream on the side. I used Pepper Jack in place of Monterey Jack. Yum!

Love this recipe! I added some smoky paprika to the spices and make sure to use a thicker salsa or drain some of the liquid from your fav. I garnished mine with some taco sauce and offered some chipotle hot sauce for the spice lovers at the table!

as I was making it…Ibwas nervous about me and my family living it. Well thankfully there was nothing to worry about. EVERYONE….even my 6 yr old loved it (we had it for breakfast). I didn’t make too many changes. I always season my meat with seasoning salt, seasoned pepper, and onions before I add my taco seasoning so I still did that. I did have to make some changes so my daughter could eat it which included only making half the lasagne without salsa, and instead using chopped tomatoes. I also omitted the cayenne pepper since it might have made it too spicy (for her). I also took the suggestion of using flour tortillas instead of corn tortillas. I used EVOO spray to grease the pan which made the bottom layer extremely difficult to cut through (but still edible)…I think I may try butter next time??. This is definitely a keeper!

Easy and simple to make. And SO delicious!! I made this with my sister who is a picky eater and even she really liked it! What we did a little differently: put the salsa through a food processor so it was smooth instead of chunky for my sister, and no green onions on half for her. This is sure to be a favourite.

Made it for my family. The only change I made was to use flour tortillas . A nice zing with the spices, easy prep and per the family, a keeper recipe.
