Sweet Sausage Marsala

I’ve prepared this several times for visitors, and each time they raved about it. It’s an excellent Italian dish that doesn’t take much effort to prepare.

Ingredients

  1. 1 (16 ounce) package farfalle (bow tie) pasta
  2. 1 pound mild Italian sausage links
  3. ⅓ cup water
  4. 1 clove garlic, minced
  5. ½ large onion, sliced
  6. 1 medium green bell pepper, sliced
  7. 1 medium red bell pepper, sliced
  8. 1 tablespoon Marsala wine
  9. 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  10. 1 pinch dried oregano
  11. 1 pinch black pepper

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
  2. Place whole sausages and 1/3 cup water in a skillet over medium-high heat. Cover, and cook 5 to 8 minutes. Drain and thinly slice.
  3. Return sausage to skillet. Stir in garlic, onions, peppers, and Marsala wine. Cook over medium-high heat, stirring frequently, until sausage is cooked through. Stir in diced tomatoes, black pepper, and oregano. Cook about 2 minutes more, then remove from heat. Serve over cooked pasta.

I made this exactly as written with a little bit more salt because the tomatoes had no salt added. It was really pretty easy and delicious. I think when I make this again, I will cook the sausage ahead of time so that is one less pan, I used quite a few for this. When the sausage and vegetables were ready to serve, I just added the pasta to the pan and served this way. My husband loved this. I have to say, I did not think the Marsala added much to the dish. I think the vegetable flavor overpowered any Marsala which I personally love in recipes. I know this would be a good company dish.

Basically followed the recipe, sauteed peppers, onions, sliced raw sausage 10 minutes or until almost done and then garlic, mushrooms I needed to use. Add 1 cup marsala, tomatoes and 1/2 can “Prego”. Simmered to consistency I wanted. Added farfelle to sausage mixture and served. Added fresh shredded parmesan to dish.

As written, this recipe is a 4. With some simple tweaks, it can be a 5. Many others have commented on the same things and they would be correct about adding more tomatoes and more Marsala. It’s called Sausage Marsala, so 1 Tbsp of Marsala is only going to burn off in the pan. I used WAY more (like 1 cup) and also a large sized can of diced tomatoes and a lot more garlic. This provided a wonderful sauce. I also preferred to pan sear the sausages slices and veggies before adding any liquids so all the edges would crisp up. In the end, it was totally delicious!!

This was absolutely perfect. Needed to add more water as sausage was cooking. Added more marsala and a dash of olive oil because the skillet was so dry. Very tasty!

I did change quite a bit based on our preferences and what I had on hand. I used about 1and1/2 LBS of sweet sausage also added 1 can of tomato paste and 2 cans of fire roasted tomatoes. I didn’t have green peppers so added one whole red and one whole yellow pepper. Also added 3 garlic cloves and 1 cup of Marsala wine. We like a saucy pasta, so as edited it was great! YUM

Changes I made were to eliminate the green pepper, more tomato and substituted elbow macaroni; otherwise the same. I thought it was okay, but my husband said “Don’t make it again!” Forgot to say we both thought it a waste of marsala when red wine would have worked better.

Very tasty, and a nice change from the usual tomato sauce! Added more marsala, more garlic. and more olive oil, for depth of flavor…next time will try to thicken it just a bit, so that it coats the pasta more.
