Ingredients
- 3 cups strawberries, hulled and sliced
- ¼ cup confectioners’ sugar
- 1 tablespoon brandy
- 1 ½ cups chilled sparkling wine
- 3 large whole strawberries
Instructions
- Blend hulled strawberries, confectioners’ sugar, and brandy in a blender until smooth. Chill in the refrigerator for 10 minutes.
- Divide the strawberry mixture among three champagne flutes. Pour 1/2 cup sparkling wine into each flute and stir to combine. Garnish each glass with a whole strawberry.

Made this for my wife for mother’s day. I took the advice of several reviews and added more bubbly. I also substituted rum for the brandy. The rum gave It a more summer feel. It is very refreshing!

Very tasty, but as another reviewer noted, the Bellini was quite thick. My suggestion would be to add more champagne (never a bad thing) to balance the fruit. Thank you Helen for a nice twist from a true Bellini.
