Stir-Fry Chicken and Vegetables

A Quebec recipe, this. extremely straightforward and simple. If you’d like, you can add nuts. The poor man’s pudding, which uses brown sugar syrup, has been “upgraded” by the addition of maple syrup. Eventually, the maple syrup will reach the bottom.

Ingredients

  1. 6 ounces skinless, boneless chicken breast, cut into small pieces
  2. 2 tablespoons soy sauce
  3. 2 tablespoons dry sherry
  4. 1 tablespoon cornstarch
  5. 1 tablespoon vegetable oil
  6. 1 zucchini, cut into rounds and quartered
  7. 1 large green bell pepper, cut into squares
  8. 1 cup broccoli florets, cut into pieces
  9. 3 cloves garlic, minced
  10. ½ cup chicken broth
  11. 1 tablespoon vegetable oil
  12. 6 green onions, chopped

Instructions

  1. Mix chicken, soy sauce, sherry, and cornstarch together in a large bowl.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat; cook and stir zucchini, bell pepper, broccoli, and garlic for 2 to 3 minutes. Add chicken broth, cover, and simmer until vegetables are tender, 4 to 5 minutes. Transfer vegetables and sauce to a large bowl and wipe the skillet clean.
  3. Heat remaining 1 tablespoon vegetable oil over medium-high heat; cook and stir chicken until meat is no longer pink in the center, about 5 minutes. Stir in vegetables; continue to cook and stir for 2 to 3 minutes more. Sprinkle with green onions.
  4. I usually at least double this recipe. You don’t have to be exact on the proportions, just use enough cornstarch so that the sauce at the end is thick enough.

I made this as written. It needs something more. We both thought it was bland. We sprinkled some soy sauce at the table, it helped a little. I’m thinking a little ginger might make it not so bland. I’m open for suggestions.

This was a pretty good chicken stir-fry recipe. Very easy & pretty quick. I used frozen stir-fry veggies because it’s what I had so I cut the cooking time a little. I also doubled the sauce. All-in-all, I would make it again.

Quick and easy to make. Very delicious. I didn’t have cooking sherry so substituted rice wine. Also, added bean sprouts on top to finish. Will definitely make this again.

Loved the recipe but the photo is deceiving. It shows mushrooms and red pepper which are not ingredients in the recipe. It also pictured the stir fry over rice and noodles…not suggested. In spite of that, it was a great recipe. I did add mushrooms and served it over brown rice with soy sauce on the side. I would definitely make it again and include the red pepper and mushrooms.
