Steak Tacos

The flavors are all there in these beef tacos! The lime juice, cilantro, brown sugar, and red pepper flakes are combined to make a marinade that is hot, acidic, and sweet.

Ingredients

  1. 1 cup chopped onion
  2. ½ cup chopped fresh cilantro
  3. 3 limes, juiced
  4. 4 tablespoons soy sauce
  5. 2 tablespoons olive oil
  6. 4 teaspoons dark brown sugar
  7. 2 teaspoons dried oregano
  8. 1 ½ teaspoons red pepper flakes
  9. 1 clove garlic, minced
  10. 1 pound skirt steak, fat removed and flattened to 1/8-inch thickness
  11. 4 corn tortillas

Instructions

  1. Combine onion, cilantro, lime juice, soy sauce, olive oil, brown sugar, oregano, red pepper flakes, and garlic in a large bowl.
  2. Place steak in a baking pan and pour marinade on top. Cover and refrigerate at least 1 to 4 hours.
  3. Preheat an outdoor grill for high heat and lightly oil the grate.
  4. Grill steak 2 to 4 minutes per side, to desired doneness. Allow meat to rest 5 to 10 minutes before slicing against the grain into 1/4-inch slices.
  5. Add meat to tortillas and top with your favorite toppings.

Very simple recipe & very tasty. Used more garlic and onion powder vs onion in the marinade. On the grill Sunday quickly then sliced and on the griddle Tuesday with the onions and peppers. Fast weekday meal and yum! Definitely worth trying!

Made as written and these turned out good. A little different than regular way of making skirt steak tacos but sometimes different is good. The one thing I did not like about this was the red pepper flakes. They seemed out of place to me. Next time I’ll substitute cayenne.
