Ingredients
- 1 (16 ounce) package cheese tortellini
- 1 (14.5 ounce) can diced tomatoes with garlic and onion
- 1 cup chopped fresh spinach
- 1 ½ teaspoons dried basil
- 1 teaspoon minced garlic
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¾ cup milk
- ¾ cup heavy cream
- 2 tablespoons all-purpose flour
- ¼ cup grated Parmesan cheese
Instructions
- Fill a large pot with lightly salted water and bring to a rolling boil. Add tortellini and cook until tender, about 10 minutes.
- Meanwhile, combine tomatoes, spinach, basil, garlic, salt, and pepper in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
- Whisk milk, cream, and flour together in a medium bowl. Add to the saucepan along with Parmesan; stir together. Cook until sauce is heated through, 3 to 5 minutes. Reduce the heat to low and simmer until thick, about 2 minutes.
- Drain tortellini, but do not rinse. Gently add to the saucepan and stir to coat with sauce.

Easy and tasty weeknight meal. I made a few changes out of necessity. I used frozen spinach, which worked fine. I also used mostly half-and-half for the cream b/c I was out. Neither of the subs made the sauce too thin.
This was a very fast meal to put together, and the flavors were just right – no need to modify any of the spice amounts. As others suggested, I increased the spinach to 3 cups. Also, I used milk and half-and-half instead of any heavy cream. Even then, I wished the sauce were a bit thinner, so next time I make this, I’ll use only milk. My vegetarian family loved this, and I’ll make it again soon.
Great dinner dish, my boys loved it, added extra spinach!! Update: Doubled the recipe this time, sauteed the garlic and spices in a pound of extra lean ground beef. Added that to the sauce and added a little more seasoning.

This is awesome. I didn’t have that type of tomatoes on hand so I used my basil, oregano, and garlic diced tomatoes and cut back on the basil in the receipe to 1 teaspoon as well I added some minced dried onion. All the changes worked very well!! LOVE IT! This makes up fast – great for a busy day’s meatless dinner or a lazy days meatless dinner. (And we all have those
Pretty good. Only difference was I cut up a few tomatoes, garlic, and some onion instead of using the mixture out of a can. Still pretty good I thought.
This was a quick, easy and tasty lunch for one. I paired with a cheddar bay biscuit.
I liked it! I doubled the portion of spinach to get more vegetables. Because spinach welts it was an easy addition. Also I used fresh basil instead. Also thinned the sauce with a quarter cup of the pasta water. Especially easy to make. If only my picky kids liked it!
This recipe is delicious. The only change I made was to use fire roasted garlic tomatoes because I could not find the ones listed in the recipe. The sauce was creamy and wonderful. I served with sautéed mushrooms and garlic bread. I will make this again and next time put the mushrooms in the pasta dish.

My family LOVED it!! My husband thinks a meal without meat is odd, so I added ground Italian sausage and also substituted 1/2 a jar of sun-dried tomatoes for the plain ol diced tomatoes…it was heaven!! the next time I made it, I added mushrooms!!
This recipe is a favorite for us, but my husband likes me to add some Italian sausage or shrimp. Both are yummy!

This was a great dish with a little tweaking. First I minced a medium yellow onion and sautéed for about 2 minutes, then added 3 cloves of minced garlic and sautéed about 1 minute more. I then added all of the ingredients from the second step and cooked for a few minutes while bubbling. I turned down the heat and added about 6 cups of fresh spinach. I let that wilt about half way, then added baby Bella mushrooms. I mixed 1/4 cup of the milk with 1 tablespoon of cornstarch, then whisked all of the milk mixture together and added it to the pan. I let that get to a boil and then turned it down to cook for about 5 minutes (stirring occasionally). I added the cooked tortellini last, and tossed to coat. I ended up with a thick, creamy, wonderful dinner!! I’m still going to add more garlic next time though.
Didn’t change a thing! For those in my household that don’t care for either spinach or tomatoes, there were no left overs.
I thought we would really like this, but it was kind of bland. I will try adding more garlic and parmesan next time.
