Spanish Rice and Shrimp

There isn’t much better fried chicken than this. It’s excellent.

Ingredients

  1. 2 cups water
  2. 1 (7 ounce) box Spanish yellow rice mix (such as Goya®)
  3. 3 tablespoons olive oil, divided
  4. ½ cup diced onion
  5. 1 pound uncooked medium shrimp, peeled and deveined
  6. 1 green bell pepper, diced
  7. 1 red bell pepper, diced
  8. 1 tablespoon sweet and spicy seafood seasoning (such as McCormick®)
  9. ½ cup fresh parsley, or to taste

Instructions

  1. Bring water to a boil in a saucepan. Add rice mix and 1 tablespoon olive oil. Boil for 1 minute; cover and reduce heat. Simmer until water is absorbed, about 25 minutes.
  2. Heat remaining olive oil in a skillet over medium-high heat. Add onion and saute until just soft, about 2 minutes. Add shrimp, green bell pepper, red bell pepper, and seafood seasoning. Cook, stirring occasionally, until shrimp are bright pink, about 5 minutes.
  3. Mound rice on each plate; top with a portion of the pepper-shrimp mixture and a generous sprinkling of parsley.
  4. The directions for making rice are based on the particular brand mentioned. Follow instructions on the box if using a different brand.

I followed the recipe as I had bought yellow spanish rice.. tasted great…easy and delicious sautéed the veggies and shrimp while rice was cooking YUM!!

Flavorful and super simple. You can have this ready in way under an hour if you plan it right. Start to finish was 30 minutes for me. As soon as you get the rice covered start chopping the veggies to get them going. Continue on with the rest of the steps and everything comes out at the exact same time. This recipe would be perfect for nights you have limited time.
