Soba Noodle Veggie Bowl

Ingredients

  1. 3 ounces dried soba noodles
  2. 2 tablespoons soy sauce
  3. 2 tablespoons oyster sauce
  4. 1 tablespoon mirin (Japanese sweet wine)
  5. 1 tablespoon olive oil
  6. ½ green bell pepper, chopped
  7. ¼ onion, sliced
  8. ½ cup fresh green beans, trimmed and cut into 1 1/2-inch pieces
  9. 1 cup baby spinach leaves

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Drop in soba noodles and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain.
  2. Meanwhile, combine soy sauce, oyster sauce, and mirin in a small bowl. Set aside.
  3. Heat olive oil in a skillet over medium-high heat. Add bell pepper, onion, and green beans and saute until softened but still crisp, 2 to 3 minutes. Add soba noodles and toss with the cooked vegetables. Mix in soy sauce mixture and cook for an additional 1 to 2 minutes. Add baby spinach and cook until desired doneness, 2 to 3 minutes. Serve in a bowl.

This was really good. I added my own touch, but overall it is a good base recipe.

I added bamboo and watercress to the veggie stir fry and topped it with fresh green onions and a squeeze of lime. Otherwise followed the recipe and loved it. The kids and family loved it too. This will for sure be in regular rotation with all kinds of different veggies depending upon what we have on hand!
