Ingredients
- cooking spray
- 2 red bell pepper, seeded and sliced into strips
- 4 (8 ounce) boneless pork loin chops
- ½ cup teriyaki sauce
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
- ¼ cup creamy peanut butter
- ½ cup chopped green onions
- ¼ cup chopped roasted peanuts
- 2 limes, cut into wedges
Instructions
- Coat a slow cooker with cooking spray. Place bell pepper strips and pork chops into the slow cooker. Pour teriyaki sauce, vinegar, garlic, and red pepper flakes over the pork chops.
- Cover and cook on Low until pork is very tender, 8 to 9 hours. Once tender, remove pork from the slow cooker, and whisk in peanut butter until smooth. Return pork to the slow cooker, and cook 10 minutes more.
- Pour into a serving dish and sprinkle with green onions and peanuts to garnish. Decorate with lime wedges to serve.
- I often use a 2-pound boneless pork loin, cut into 4 pieces, instead of pork loin chops. Try using a liner in your slow cooker for easier cleanup.

With adjustments, this is 5 star. Other reviews nailed it, the cooking time is far too long and the bell peppers need to be added later so they aren’t completely wilted. Serve over basmati rice. I made this with chicken thigh fillets tonight and it was really good too. I still prefer the pork though.
Delicious! We added more peanut butter(crunchy b/c we love peanut butter) & half of a white onion. We used 4 thick center cut chops. Crocked for 6 hrs on low. Was so tender & juicy! A certain do again meal!!
This recipe is a keeper! My family loved this! It is super easy to make and I love crockpot recipes especially going into the warmer months, as I don’t have to heat the kitchen up with the oven. I did double the recipe and it turned out perfect!
Kind of bland. To be fair, I cut way back on the red pepper flakes, but I expected to taste more than a vague hint of peanut butter.

Added a chopped onion and cooked on high for three hours. My chops were thin so this was perfect. Trying chicken next!
I used chicken breasts instead of pork. And I served it over rice noodles. My family really enjoyed it. I’m disabled and using one pot recipes is what I do to make it easier on me.
I agree with other posters …… should be called ‘Thai-like’ ?”Coat a slow cooker with cooking spray”? NOPE! And if you don’t have a liner, as one of the ‘tips’ suggest, you can use a roasting bag, it’ll work just fine. Also, I would ruin my beautiful red sweet peppers by putting them in right away, I’d add them with the peanut butter. I WOULD add ONIONS right from the get-go tho, in place of the red peppers. I might even add coconut milk to give it a ‘curry’ slant.
This was much saltier than I would have liked. I also didn’t love the combination of peanut butter and pork. I could also taste the honey, which didn’t blend with the other flavors well enough for my preferences.

Delish! We modified and used our quick cooker. We did it for 45 minutes but I think it was just slightly too long.
This is a great recipe. I double the sauce and use a pork shoulder roast because it come out much more tender than a sirloin roast
I used the magazine version of this recipe and it was perfect. Cook on low for two hours before adding bell peppers and cooking for another hour. Soft, tender pork that was cooked through and delicious meal that my kids also enjoyed. That’s a win in my book.

This was extraordinarily bland and dry. I cubed the meat to gain some moisture. If I make it again, I will add more teriyaki and fish sauce.
My husband and I lobe Tai food so I was super excited to try this. I think it turned out great!! Definitely need the lime to cut the salt of the premade Teriyaki sauce…I think I might get a bottle of reduced sodium or just make my own (which kind of defeats the purpose of it being a “quick” dinner lol)
I will definitely make it again. I used boneless pork chops which came out tender and tasty! The creamy peanut butter thickens the juices and adds more flavor. The toasted peanuts and green onions were perfect!
I’m giving this five stars because the flavor was amazing. I cooked the pork loin chops for 8 hours on low and I think it was a bit too long because the meat was somewhat dry. The next time I make this I’m going to cook on low for 6 hours. Other than cooking time I wouldn’t change a thing.
I bought a whole pork loin roast and cut my own chops for much less money than if I had paid for the pre-cut chops. I served it with the coconut rice and everything was delicious. I added some roasted root vegetables to complete the meal and served everything to our company. The reviews from them convinced me that this is a recipe I will certainly make again!

Some people said this was to salty, but my family and I didn’t get the salt taste. I added extra garlic powder and next time I’d add some onion powder.
