Ingredients

  1. 4 skinless, boneless chicken breast halves
  2. 4 teaspoons taco seasoning mix
  3. 1 cup salsa
  4. 1 cup shredded Cheddar cheese
  5. 2 tablespoons sour cream (Optional)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9×13-inch baking dish.
  2. Place chicken breasts in the prepared dish. Sprinkle seasoning mix on both sides of chicken breasts; pour salsa on top.
  3. Bake in the preheated oven until chicken is tender and juicy and the juices run clear, 25 to 35 minutes.
  4. Sprinkle chicken evenly with cheese. Continue baking until cheese is melted and bubbly, 3 to 5 minutes more. Top with sour cream and serve.

Super easy and tastes great…AS WRITTEN! I do not like pieces/chunks of tomatoes and stuff in salsa, so I just use an immersion blender to get it to the consistency I like.

I cut the chicken into 1 inch cubes then put them in a zip bag pour the taco seasoning in then shake shake your booty till all are covered well. You can also use cocktail sauce instead of salsa.

I honestly was very surprised at how delicious this turned out. I omitted the cheese and sour cream and cooked it in a slow cooker and it was scrumptious! I made some Spanish rice with it but it would have been great in tacos! Definitely saving this recipe!

This dish was actually way better than I thought it would be! The only changes that I made was using pineapple salsa and then garnishing with fresh cilantro, green onions fresh squeezed lime and tortilla strips after it came out of the oven. Served over yellow rice. I will absolutely be making this again. The whole family liked it.

No changes, it was perfect as written. It can be spiced up if you want by using spicy taco seasoning or salsa, the mild was just enough for us. Also very easy and quick to make, comes out perfect every time

I really loved this recipe. It’s so simple, but renders such a nice juicy chicken meal. I rubbed the taco seasoning into both sides of the breasts with some garlic powder, Mexican oregano, cumin, and Adobo seasoning. I drizzled some olive oil to seal in the spices. Lined the bottom of the pan lightly with salsa, added the chicken, and put the remainder of half a jar of salsa on top. My salsa was pretty spicy, but the sour cream cools it down and I also sliced a few avocados on top. Totally yummy!

My husband’s favorite dinner!! I cut fresh chicken breast into bite sizes and put it all in a zip lock bag and sprinkle the seasoning over it and shake it until all the pieces are covered. Then I follow the rest of the directions. We put it over rice. I add sour cream to mine. It’s amazing!

Many thanks! A keeper! Easy, delicious, and versatile! I didn’t have any seasoning packets, so just blended the usual seasonings (ie chili powder, cumin, garlic/onion powders, black pepper and crushed chilis. After adding the cheese, I broiled the dish for a few minutes to brown. This dish would look pretty with ie chopped scallions and red pepper. I borrowed from another reviewer the idea of quickie ‘Mexican corn’ by adding red chilis and ground pepper as a side dish. In a moment of brilliance (lol) I added the corn on top of the steaming rice just before cooking time was up and served corn and rice together. Bonus is this took very few dishes!
