Portuguese Chourico, Beans, and Rice

My mother often made chourico, a traditional Portuguese comfort food, so I grew up eating it. Even with the tweaks I made to make it more energetic, it still makes me think of my younger years. It’s a hearty and filling dinner.

Ingredients

  1. 2 cups water
  2. 1 cup uncooked white rice
  3. 2 tablespoons olive oil
  4. 1 dried chourico sausage, halved lengthwise and cut into 1/4-inch slices
  5. ¼ Spanish onion, finely chopped
  6. 3 cloves garlic, minced
  7. 1 ½ cups tomato sauce
  8. ½ teaspoon red pepper flakes
  9. 1 teaspoon Italian seasoning
  10. salt and pepper to taste
  11. ½ (14.5 ounce) can fava beans, rinsed and drained

Instructions

  1. Bring the water to a boil in a pot; stir the rice into the boiling water, reduce heat to low, place cover on the pot, and allow the rice to cook until all the moisture is absorbed, about 30 minutes.
  2. As the rice cooks, heat the oil in a skillet over medium heat. Cook the chourico in the hot oil for 2 minutes. Add the onions and garlic to the sausage and continue cooking until the vegetables are soft and the chourico has browned, 5 to 7 minutes.
  3. Stir the tomato sauce into the chourico mixture. Reduce heat to low. Season with the red pepper flakes, Italian seasoning, salt, and pepper; simmer until thoroughly heated, 10 to 15 minutes. Stir the fava beans into the mixture and continue cooking just long enough for the beans to heat, 2 to 3 minutes. Serve over rice.

Quick and easy dish… I cooked the chourico in olive oil, removed it and left the drippings, added diced onion with Portuguese all spice instead of Italian seasoning to the drippings, then the garlic. I returned the chourico to the mix after 5 min then added the tomato sauce, black pepper and red pepper flakes. Lastly I added white kidney beans for 2 minutes then served in a bowl over white rice.

I enjoyed this very much. I didn’t have fava beans so I substituted black beans and since I had a red bell pepper in the fridge, I chopped that up and included it.

Very good! I actually left out the Italian seasoning but this was delicious will make again!

This certainly is comfort food! I had to substitute kidney beans for the fava beans and some jarred spaghetti sauce for the tomato sauce (didn’t have all the ingredients in my cupboard). It came out great! Thanks for the recipe!

Please add 2-3 cloves of garlic finely chopped, when frying the onions and chourico. I have asked AR to modify the recipe as it was a mistake to be left out, but hasn’t been edited. Enjoy! Also, a great alternative to fava beans are cannelini beans (white beans).
