Pesto Grilled Cheese Sandwich

This grilled cheese sandwich with pesto was the first I tasted, and I went home right away to make my own version of it. Since then, I’ve been preparing my grilled cheese sandwiches in this manner.

Ingredients

  1. 1 tablespoon softened butter, divided
  2. 2 slices Italian bread
  3. 1 tablespoon prepared pesto sauce, divided
  4. 1 slice provolone cheese
  5. 2 slices tomato
  6. 1 slice American cheese

Instructions

  1. Spread butter on one side of a slice of bread and place it, buttered side down, into a nonstick skillet over medium heat.
  2. Spread 1/2 of the pesto sauce on the unbuttered side of the bread. Stack provolone cheese, tomato, and American cheese on top of pesto, in that order.
  3. Spread remaining pesto sauce on second slice of bread. Place it pesto side down onto sandwich in the pan. Butter the top side of bread.
  4. Gently fry sandwich, flipping once, until both sides are golden brown and cheese has melted, about 5 minutes per side.

I followed the recipe’s ingredients, grilled on low using a weight….about 5 minutes each side. It was very good but next time I will not use American cheese. For me it didn’t complement the other flavors. Very nice recipe. Thank you. BTW…it goes well with Creamy Tomato Basil soup.

I thought it was very good and very easy!! My husband LOVED it! I would say though the 5 minutes on each side was too long. It took 5 minutes TOTAL on medium low heat. I tried the 5 minutes per side and burned the bread. Thank you!!

I love it! Usually I make a grilled cheese with Muenster, tomato, oregano and then provolone but this recipe was also amazing! Will definitely be making again. I just got over Covid and found the cure to getting taste and smell back and this was the first recipe I’ve tried since I lost my senses. So good!

What a fun, flavorful twist to grilled cheese!! We loved this! I wish I had more pesto to make again tomorrow night! Me personally, I loved pesto on both slices! Hug that tomato! I love the provolone + American cheese combo! I added bacon on one of my husband’s sandwiches. He loved/I thought it didn’t do much. Thank you and will absolutely make again to elevate any simple lunch or dinner!!

Great recipe! Used Italian and/or Vienna bread. Added sautéed peppers and onions and mesquite smoked deli turkey. Yummy!!

I really love the addition of pesto. I only put it on one slice of the bread and used cheddar instead of american.

Yum! This was a fantastic, quick meal. I added some turkey, because I had one fresh out of the oven. It was fabulous! Next time, I think I’ll make some tomato soup to go alongside it. Thanks for sharing this recipe.

LOVED this slightly different rendition of a traditional American sandwich! I used homemade pesto I had made from my basil garden. I did not choose to add any tomatoes this time since the soup I was serving was tomato-based. Each sandwich had 4 medium-sized pieces of cheese–Vermont White Cheddar and Smoked Gouda. I used olive oil instead of butter for frying–this makes very crispy outsides! Will repeat this for sure. All the guys at my table were delighted with these!

Not a fan of pesto or American cheese so I changed mine to add chicken and truffle flavored cheddar cheese with garlic aioli.

Made these for lunch the other day and I could not stop thinking about it all day. It was unbelievably delicious! The only change I made was to use cheddar instead of american as I did not have any on hand. I also used sourdough. Definitely a keeper!
