Penne Pasta with Spinach and Bacon

An easy, light meal is this spaghetti with bacon and spinach. Penne pasta is combined with bacon, tomatoes, and wilted spinach. It will go well with anything and is suitable for any season.

Ingredients

  1. 1 bunch fresh spinach, rinsed and torn into bite-size pieces
  2. 1 (12 ounce) package penne pasta
  3. 2 tablespoons olive oil, divided
  4. 6 slices bacon, chopped
  5. 2 tablespoons minced garlic
  6. 1 (14.5 ounce) can diced tomatoes

Instructions

  1. Place spinach into a colander in the sink; set aside.
  2. Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  3. While penne is cooking, heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir bacon in hot oil until browned and crisp. Add garlic and cook for about 1 minute. Stir in tomatoes; cook until heated through.
  4. Drain hot pasta over spinach in the colander so it wilts. Transfer spinach-pasta mixture to a large serving bowl. Top with bacon-tomato mixture and remaining 1 tablespoon olive oil; toss until evenly combined.

This was delicious, with a few very easy tweaks. I didn’t use any additional oil and just cooked the bacon in a dry pan, then poured off all but about two tablespoons of the fat. I also used a full 16oz package of bacon, but I chopped off and discarded the fatty ends. I also used fresh, chopped tomatoes from my garden because right now we (and the neighbors) have more than we can eat. Nothing beats home grown tomatoes, but I think a good quality canned tomato would work fine. Finally, as many others suggested, I just tore the spinach into small pieces and wilted them in with the tomatoes, which worked perfectly and was easier. I meant to add some basil at the end but forgot! I will next time because I think basil would really make this already delicious dish take off. Add a bit of Parmesan to taste on top as you’re plating.

This is an awesome recipe! I didn’t have Penne so I used Radiatore, also only had 10 ounce can off diced tomatoes with green chilies so I added 2 cans. It was delicious! I used 1 pound of fresh baby spinach. My son topped it with a bit of shaved parmesan cheese! Thank you Jean!!!!

We made this with bacon bits (vegetarian) and it was delish! I just put a little extra oil in a pan with garlic and bacon bits, to let them warm and spread the flavor, and then mixed the rest as directed. I was worried the recipe would be to plain, but it was perfect and super easy!

This is a good recipe. I used fire roasted diced tomatoes to give it a little heat. Will definitely reheat well. Will probably make more modifications the next time, but we enjoyed it this way!

Tastes like something you’d get at noodles &co. Super easy. Used whole wheat penne and squeeze tube garlic, salt-free tomatoes, 1/4 bag pre-washed baby spinach. Will make same way again.

I used twice the bacon and triple the spinach. However, I mixed the spinach in separate. When I took a little spinach to wilt it while straining the water from the noodles, it kind of cooked that spinach and make it clumpy. Adding while mixing it together was just enough to make it soft but not soggy.

I made this recipe and yes, I substituted about a cup of chopped fresh broccoli because I am “emotionally” allergic to spinach. The premise of these recipes are pretty basic and many do not even have seasonings, which I always seem to add. In this case the only different thing I did was I added 1/3 jar of an Al Fredo Sauce because I thought it lacked the creaminess I like. I gave the recipe however, a 5 star rating because of the simple basic premise.

my husband and I really enjoyed this recipe. The one thing I did differently was put the spinach in the pan with the tomatoes so I could get a good wilt. it only took about 2 minutes to wilt with a lid on. I also added a sprinkle of fresh ground pepper. I will definitely make this again.
