Pasta with Clam Sauce

Radicchio is tamed of its raw harshness by grilling it, which also gives it a smokey flavor. This dish is easy to make and goes well with any grilled meat.

Ingredients

  1. 1 pound fresh mushrooms, sliced
  2. 1 green bell pepper, diced
  3. 2 tablespoons butter
  4. 1 pound fettuccini pasta
  5. ½ large head broccoli, cut into florets
  6. ¾ cup butter, divided
  7. ¼ cup grated Parmesan cheese
  8. ½ teaspoon dried oregano
  9. ½ teaspoon dried parsley
  10. ¼ teaspoon garlic powder
  11. ¼ teaspoon ground black pepper
  12. ¼ cup all-purpose flour
  13. 1 pint heavy cream
  14. 1 (14.5 ounce) can chicken broth
  15. 2 (6.5 ounce) cans minced clams, drained

Instructions

  1. In a large skillet over medium heat, cook mushrooms and bell pepper in 2 tablespoons butter until tender. Remove from heat and set aside.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Steam broccoli in colander over pasta water, or in steamer, until bright green, 5 to 10 minutes.
  3. Toss cooked pasta with 1/4 cup butter, Parmesan, oregano, parsley, garlic powder and black pepper. Cover and set aside to keep warm.
  4. In a medium saucepan over medium heat, melt 1/2 cup butter. Dump in flour all at once and whisk until smooth. Whisk in cream and chicken broth a little at a time and cook until mixture thickens. Stir in clams and reserved broccoli, mushrooms and bell pepper. Heat through and toss with pasta. Serve at once.

Loved this as a starting point. And I’m sure worth 5 stars if made as is. I skipped the broccoli because I had none, used frozen clams in the shell, and a couple other substitutions. But the pasta was great, and cream sauce for the clams was great too. Will make again with more garlic and a loaf of fresh bread.

This has a lot of butter, but it is so freaking good! I added an extra thing of clams because my family is a huge fan. It really was a yummy meal! Only complaint was I had a lot of dirty dishes.

I liked it – others did not. I subbed 1/2 and 1/2 for cream and subbed cut up chicken breasts for the clams. I know, I know, not really the recipe, but thought chicken would work better. I definitely will try it next time with the clams!

Good, but bland. I hate having to put salt and pepper on a dish and that’s what I had to do. This dish needs some more seasoning. And their is no point in spending money on clams when you can’t taste them.

I am NOT a fan of seafood, and I thought this was excellent!! It did not have that “fishy” taste that I don’t like. Used 2 cans of chopped clams and one can of baby clams. Skipped the broccoli, and sauteed several cloves of garlic with the mushrooms and red bell pepper I used linguine, but I didn’t add butter, and I added the herbs and cheese to the sauce after adding the broth and cream. I used half-and-half. Easy to prepare and very filling. Highly recommended.

Very good base recipe. I did make a few changes. I couldn’t see using chicken broth when I had clam juice just sitting there. Tossed that in and added a little white wine.

Really good…I made it with canned shrimp instead, because my husband doesn’t care for clams. He also didn’t care for the green peppers, but other than that he loved it, and he’s picky. Great recipe….I’d recommend it

Very good. Easy to make and took your short cut to steaming the broccoli; one less pan to wash. I actually made this with chicken instead because I didn’t have any clams and I had broccoli and bell peppers to use up in the frig. Also, used lowfat milk and it came out really good.

I have been searching for an excellent creamy clam sauce to rival those in restaurants for years. This is it! In my house we call it heart-attack pasta, but it is worth it!
