Ingredients

  1. 1 ½ pounds lean ground beef
  2. 1 small onion, chopped
  3. 1 cup crushed tortilla chips
  4. ¾ cup shredded pepper Jack cheese
  5. 1 (1 ounce) packet taco seasoning mix
  6. 2 large eggs, beaten
  7. ½ cup milk
  8. ¼ cup mild red taco sauce, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix together beef, onion, tortilla chips, pepper Jack cheese, and taco seasoning in a large bowl until combined. Whisk together eggs, milk, and taco sauce in a medium bowl. Add to beef mixture and stir until well combined.
  3. Press mixture into a 9x5x3-inch loaf pan. Pour a strip of taco sauce down the center of loaf.
  4. Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes. An instant-read thermometer inserted into the center of loaf should read at least 160 degrees F (72 degrees C).

Delicious and easy! Nice twist to traditional meatloaf. I served with sliced avocados, Spanish rice and a salad.

I used 3/4 cup of mild salsa in place of the milk and the red sauce. I mixed in the eggs into the salsa then added the tortilla chips and set aside for about 10 minutes. After that, followed the recipe the rest of the way. YUMMY! Oh, and salsa at the topping versus ketchup.

My family loved this! I doubled the recipe. Also, added chopped pickled jalapeños because I had only Mexican fiesta blend cheese. What a tasty meatloaf. Definitely will make this again.

So good! I added a small can of of mild peppers and some garlic (we think everything is better with garlic!) Used flavored chips and 4 cheese taco cheese. The kids don’t like meatloaf but cleaned their plates. Will absolutely make this again!

Yes, I didn’t have onion used onion powder. Put in a casserole pan put taco sauce all over the top. Really good recipe, my granddaughter doesn’t like meatloaf, but had two helping yum

I used ground turkey which made the meatloaf softer and wetter. The flavor was soooooooo good. Can’t wait to make it again. Will probably add more crushed tortilla chips next time

I added more cheese, and made a little trough on the inside with cheese melted inside the middle and for the hot sauce I Cholula Original Hot sauce. It came out very good. I think next time I will layer the cheese, put meat on bottom then a layer of cheese, meat, cheese… And then make some kind of hot sauce and corn chip topping, it needed some kind of sauce on top…

wow this was really good! definitely will make again. The Kansas came out in me and I had to top it with a sauce, or risk being exiled from the state, so I mixed together salsa a little ketchup, and taco spice and put it in top before baking. I also made the mixture a day before and kept in the fridge and baked it tonight. seriously good and easy recipe! thank you!

I liked it and so did my husband. I will make it again. I think I smashed the tortillas a little small so I won’t the next time. Overall it was good just different. I’m a very picky eater but my husband saw this recipe and wanted to try it.

I’ve made this twice this week already! I made it with ground turkey so I increased the taco seasoning (homemade seasoning) by quite a bit. Even the picky kids ate it! I also made it into 2 loaves and placed them on a foil covered cookie sheet just for ease. It took 45 min to cook at 350. I served it with salsa and sour cream. Thanks for another recipe to add to my arsenal!
