Mexican-Style Pinto Beans

Ingredients

  1. 1 pound dried pinto beans, rinsed
  2. water to cover
  3. 1 (32 ounce) container whole peeled tomatoes with juice
  4. 1 red onion, chopped
  5. 1 jalapeno pepper, chopped
  6. 1 tablespoon chili powder, or to taste
  7. 1 tablespoon ground cumin, or to taste
  8. 1 ½ teaspoons garlic powder, or to taste
  9. ½ bunch fresh cilantro, chopped
  10. salt and ground black pepper to taste

Instructions

  1. Place pinto beans in a large pot and pour in enough water to cover by 2 inches. Add tomatoes with juice, onion, jalapeno pepper, chili powder, cumin, and garlic powder; bring to a boil. Reduce heat to low and simmer for 3 hours.
  2. Stir in cilantro, salt, and pepper. Continue to simmer until beans are soft, about 1 more hour. Taste the liquid and add more of any of the spices you feel will make it taste better.

I made this as written in regards to ingredients. I did alter the cooking method by using my instant pot for step 1. I used 8 cups of water to the 1 lb of beans and cooked for 45 minutes. I also added a 28oz can of whole tomatoes (I could not find a 32 oz can). My tomatoes remained whole so I would suggest using diced tomatoes in the future or chopping them up. My family ate the beans as part of taco bowls and burritos and said they were okay. They did prefer the normal way I make them to these.

It’s uniquely different from simmered beans and a salt pork I’ve grown a custom to. I’ve plans to used this recipe the second time around to tweak a chili chulupas recipe needing the fresh cilantro. I’m curious if salt pork could enhance its flavor as well. Although as mentioned its great all on its own just like my wife’s chili just no meat.

These beans are GOOD!! They tasted just like my Hubby’s chili minus the meat! I will say, even cooking on low, the liquid evaporated quite a bit so I probably added about 1/3-1/2 cups of water. I still had about 2 hours of cook time left. It might have been my stove so just be aware. Otherwise, I made the recipe as is and it was great!
