Ingredients

- 1 pound ground beef
- ½ cup chopped onion
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes with lime juice and cilantro (such as RO*TEL®)
- 1 (8.75 ounce) can whole kernel sweet corn, drained
- 1 (4.5 ounce) can chopped green chiles, drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon minced garlic
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes
- 6 flour tortillas
- 2 cups shredded Cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13×9-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease.
- Stir tomato sauce, black beans, diced tomatoes with lime juice and cilantro, corn, and chopped green chiles into the ground beef mixture; season with chili powder, cumin, garlic, oregano, and red pepper flakes. Reduce heat to low and cook mixture at a simmer for 5 minutes.
- Spread about 1/2 cup beef mixture into the bottom of the prepared baking dish; top with 3 tortillas, overlapping as needed. Spread another 1/2 cup beef mixture over the tortillas. Sprinkle 1 cup Cheddar cheese over beef. Finish with layers of remaining tortillas, beef mixture, and Cheddar cheese, respectively.
- Bake in preheated oven until heated throughout and the cheese is melted, about 15 minutes. Cool 5 minutes before serving.

I made this tonight for my husband and myself. I loved it, he liked it. I followed the recipe except that my store didn’t have the tomatoes with lime juice. So I used regular diced tomatoes and added about 2T of lime juice. I probably used more than 2 cups of cheese. I buy the block and shred it myself, so I just threw a bunch on there. I will make it again, and there’s plenty left over for lunches or even another dinner.
The flavor was amazing! I did change a few things. After reading the reviews, I decided to fry the tortillas first. The problem with that according to my husband was that they were tough. I had a pound of leftover pork roast and I substituted it for the ground beef. When I say the flavor was great, my college age son ate half the pan! We decided to keep the recipe but use it as a topping for chips–fancy nachos!
This is a much requested recipe by my college age sons. They say it is really good but doesn’t have enough spice. I have never tried it given the amount of extra spice I have to add. Also, I never use flour tortillas in a casserole. Always turns to soggy mush so use corn or tortilla chips instead.
Yummy and filling. Hubby says to “add it to the rotation.” I used a whole onion and subbed a chopped fresh Anaheim chile for the canned. I also added a few squeezes of fresh lime juice and about a 1/4 cup of fresh cilantro. Check the math and give a size for the tortillas. I used two layers of two 8 inch flour tortillas this time (4 total). Next time, I might try crispy corn options. One needs to use a LARGE skillet. The sauce filled my 10 inch cast iron to the brim.
Yummy and easy. I served with some sour cream and extra cilantro. Paired with a salad. Next time I think I’ll serve with avocado too.

I made it with home made taco seasoning I had on hand. Fast fabulous and will be making again. I used a round dish so the tortillas fit perfectly. Love the idea and the flavor. Thank you!

Dispensed with the tortillas, and layered with tortilla chips instead. Also used Mexicorn. Next time might try layering with Fritos, or Nacho Cheese Doritos.

First, it’s best to mix ingredients in a bowl and then add to the beef and onions that you cooked. Lots easier. Second, don’t just add 1/2 cup of mixture to the baking pan. It needs to be 1/3 of the total mixture. And do that 3 times. Directions are not good but the casserole turned out OK after I made those changes. Will make it again! Might also be good to fry the tortillas before adding them to the casserole. They were a little doughy.
I used corn tortillas instead and added much more flavor. Also used some enchilada sauce.
Made this for Christmas. I used 8 flour tortillas, 2 went into the casserole dish first, then layered as directed. Baked for around 30 min. I substituted canned pinto beans for black beans since my family doesn’t like black beans. Added a little cilantro, fresh lime juice. Family really liked it, wife can’t wait for me to make it again.
this is easy and great. i added a jalapeno. no idea what the people complaining about the tortilla texture are on about; it’s tortilla baked in liquid, what do you expect?
I thought it was great but I did make a couple of changes. I used ground pork and a taco seasoning pack to quickly get food on the table. ♀️
The meat mixture is very very tasty- would be good as a dip with chips. However, the flour tortillas just get slimy – very unappetizing.
