Mexican Pork Chop Casserole

For a special dish, bake the pork chops with the Spanish rice.

Ingredients

  1. 1 tablespoon vegetable oil, or as needed
  2. 6 pork chops
  3. 1 teaspoon salt
  4. 1 ½ cups uncooked rice
  5. 3 cups water
  6. 1 (8 ounce) can tomato sauce, or more to taste
  7. ½ (1 ounce) package taco seasoning mix
  8. 1 red bell pepper, sliced into rings
  9. 1 cup shredded Cheddar cheese, or to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat oil in a skillet over medium-high heat. Cook pork chops in the hot oil, in batches if necessary, until browned on both sides, about 5 minutes. Transfer chops to a 9×13-inch baking dish and season with salt. Pour rice around the pork chops.
  3. Mix water, tomato sauce, and taco seasoning together in a bowl. Pour over pork chops and rice. Cover baking dish with aluminum foil.
  4. Bake in the preheated oven until rice is tender and liquid is mostly absorbed, about 1 hour. Remove cover and top with bell pepper rings and Cheddar cheese. Continue baking until cheese is melted, about 15 minutes more.

I made this and the only change I made was to make my own taco seasoning mix. I also salted and peppered the chops while browning them. It was excellent for a quick tasty meal and my family loved it.

As written; as long as you listen to reviewer Regina’s searing time advice, at least very moist. I seared chops 3 min per side – seasoned with S&P beforehand. When I added the chops/rice – I also added some chopped onions and jarred jalapeños. Even with these additions, “okay-good.” Borderline mediocre. This recipe has so much potential!! Just a little boring for our tastes. Happy Cinco de Mayo!

I used the whole 1 oz taco packet of taco seasoning to give it a little more spice. Enjoyed it very much. Glad I found this recipe and this web site.

Great. Be careful not to pan fry the meat too much to overcook it. Just five min. or so to brown. Delicious! I added a can of black olives to the recipe for diversion.

This was awesome! My husband and I both loved this dish. Since I didn’t have a pkg of taco seasoning on hand, I did have some taco seasoning which I added to the tomato sauce (to taste), and I used 2C of grated cheese as we really like cheese. Didn’t have fresh red bell pepper, so used jarred roasted red peppers on my half. We gave this recipe an “A”!! Thanks!

This sounded good, but I found it lacking. I think it may need more seasoning, and perhaps onions, green chiles, etc.,
