Mexican Casserole

An ideal gift for Valentine’s Day! To beat the dough, you’ll need to use some muscle, but just consider it as pre-burning calories. Once you’ve tried one, it’s quite difficult to stop at just one. Delicious! Also delicious dipped in chocolate and loaded with ice cream. They freeze nicely.

Ingredients

  1. 2 tablespoons vegetable oil
  2. ¾ pound cubed skinless, boneless chicken breast meat
  3. ½ (1.25 ounce) package taco seasoning mix
  4. 1 (15 ounce) can black beans, rinsed and drained
  5. 1 (8.75 ounce) can sweet corn, drained
  6. ¼ cup salsa
  7. water as needed
  8. 1 cup shredded Mexican-style cheese
  9. 1 ½ cups crushed plain tortilla chips

Instructions

  1. In a large skillet over medium high heat, saute chicken in oil until cooked through and no longer pink inside. Add taco seasoning, beans, corn, salsa and a little water to prevent drying out. Cover skillet and simmer over medium low heat for 10 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Transfer chicken mixture to a 9×13 inch baking dish. Top with 1/2 cup of the cheese and crushed tortilla chips.
  4. Bake in the preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.

I have made this many times and it is now one of our favorites . I do use more chicken than recommended but otherwise everything was as the recipe stated. I used two large chicken breasts , about a pound. This makes 4 meals. You could add rice for a very filling meal. Terrific.

We are dominicans but my daughter loves to try Mexican food , she saids It was delicious I didn’t used the taco season because I don’t used those types of season I just add garlic salt and pepper and a lil o oregano. And I didn’t have the Mexican cheese I used cheddar. But it came out pretty good , I ate with tacos .

I make this dish but my family likes cheese, so I add 1/2 cup extra cheese, mixed in before the bake and1/3 cup diced green onion, sliced avocado and dollops of sour cream on top after it comes out of the oven. Drool Central

I definitely would take Dele Peterson’s recommendations about the Mexican Rice to serve it with if not add to the casserole, and totally agree about more Salsa and add chipoltle sauce, but I like spicy Mexican food. This is a great start for a Mexican casserole, but needs some tweeks. Thanks Dele for your comments, I agree.

Family approved. I didn’t have chips so I used corn tortillas and layered them like individual lasagnas (enchiladas). Delicious. I topped it off with fresh cilantro

Very good recipe.. quick and easy.. going to do this again but with carnitas. I did my recipe in a cast iron skillet to save on dishes but also for the flavor. Highly recommend it

Not a fan even after using other user’s suggestions. This recipe is not like a casserole at all. I used it as filling for tacos and that was great!

I substituted a can of Ranch Style beans for the black beans & used Nacho Cheese Doritos in place of tortilla chips. More flavor. I also add cumin for more taco flavor which I always do to any recipe calling for taco seasoning.

I took the advice of adding an onion and garlic cloves. I eye balled the water and added a 16 ounce jar of Walmart brand salsa. I used “On the Border” chips. Added a whole frozen (12oz) bag of corn. It’s delicious and has a kick to it. I will definitely be making this in the future.

This recipe is quick, simple and can be modified many different ways. I added extra black beans and left out the corn and it was still super tasty and kid friendly, which is important.

I also did a lot of innovating. I usually keep black beans in my pantry but today I was out so I subbed garbanzos. Also decided to add some corn meal mix on top like my mom used to do, instead of tortillas. Finally, I like to make my own spice mix which today consisted of ancho chile pepper, cayenne, chipotle and cumin. Also chopped up some pickled jalapeños. Yum!

Delicious!! My kids loved it. I added a garlic and onions while cooking the chicken, along with salt and pepper. Also, I bought medium salsa to give it a kick. Yum! I will make again.
