Years ago, a friend showed me how to make this without using a recipe. It goes really quickly and simply. The cold, energizing salad is delicious as a side dish or dessert.

Ingredients
- 1 pound lean ground beef
- 1 (15 ounce) can ranch-style beans
- 1 (14.5 ounce) can peeled and diced tomatoes
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (12 ounce) package corn tortillas
- 4 cups shredded Cheddar cheese
- 2 tablespoons chili powder
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly.
- Line a 13×9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese.
- Bake in a preheated oven for 30 minutes.

I did not have quite enough tortilla chips for the baking pan but I had some Lays potato chips and lined the bottom with Lays and then the meat n cheese as described and then used the tortilla chips above that layer. I also added a small can of green chilis. It came out wonderful! My dog wouldn’t leave me alone until a gave him some of it and he wolfed it down, lol! Good recipe to add to the box. I can see it’s amost like a cowby caaserole. What you have on hand! I had it all on hand except being short of tortilla chips. Lays worked fine in this pinch.
Liked! Black beans for the beans….whole pkg of Taco seasoning, and took the tip of adding diced onion and garlic to the ground beef….
Would benefit from some chopped onion, minced garlic, and some cumin! And maybe a 4oz can of chopped green chilis.
We love this recipe at home but we make it with a twist – taco seasoning and salsa is added and instead of tortillas we add spanish rice to the burger mix and top with crushed up fritos corn chips and then more cheese!!!!!
Even the fussy eater in the house liked it. I’d like to make it when he isn’t there and toss in some chili peppers or jalapenos. Quite good as is.
This to me is more like a chili pie. I followed all the tips, but I’m feeling like it needs one more spice or something to give it a kick. My son liked the tortillas the best. They aren’t fond of beans, so maybe I’ll not use them next time. Good. I’ll try it again. Quick and easy for sure.
adjusted the cream of mushroom soup for a homemade GF recipe and it’s looking good
Great recipe! I added 1/2 a pkg taco seasoning to the browned meat. I mixed all ingred together before adding to meat. I used one can Rotel tom with green chillis (do this!) and used 1/2 can refried beans-kept in the chili powder spice-started with meat mix on bottom then layered with cheese-then tortilla-ended with the meat on top – more cheese. Highly recommend doing it this way-so easy. Everything gone so will double next time for left-overs.
Easy peasy! I used flour tortillas and a packet of taco seasoning, as some of the reviewers suggested. I also layered the cheese midway through the casserole, and then on top. Topped with sliced black olives, We found it to be a little doughy. Next time, I will use the corn tortillas as directed. Otherwise delish! My husband appreciated that it is one of the few Mexican casseroles that did not call for sour cream. He doesn’t like it…Will try again with corn tortillas and update my review. Thanks so much for this recipe! I used it as a base for what I had in the fridge…ground beef, chorizo, sharp cheddar, pepper jack, a can of chili pepper, can of Olives, and some frozen tomato chili sauce left from my garden …oh and corn tortillas. Came out WONDERFUL!
This is absolutely delicious. My only changes: refrained beans, hot taco seasoning and added cut onions, peppers and corn.
Addendum: Also there is no way this recipe serves 12! Was that a typo maybe? I thinkth he way it’s written would serve 4. I changed the servings to 4 but that would have made a snack for one! Oh my!
I enjoyed this recipe and it came out great. I did make two changes which I liked. I didn’t have ranch style beans plain mine had jalapenos and the cheese I used was a mexican blend which turned out really good. The next time I make this dish I will try the cheddar cheese to see the difference.
Easy and delicious. I made rice on the side but it is great the way it is.
I made this and loved it. I did change a few things. I used flour tortillas instead of corn tortillas. I also used taco seasoning in place of chili powder, and instead of the soup, I used a can of creamed corn. I would absolutely make this again!
I’ve made this a few times now and it is delicious! It is also great use for dried out or soggy tortillas and other leftover ingredients. I’ve mixed in rice instead of beans and it works well. I put the beef in the crockpot with salsa or seasoning and then layer the casserole later. I’ve experimented with adding jalapeno slices to the bottom layer or salsa. I serve with salsa so people can choose their spice level and how dry or wet they like it. It tastes great when warmed up days later!
This can be as good as you make it. Top it with some sour cream and fresh cilantro. Yum! But you really need to use corn tortillas to approach a more authentic Mexican flavor. Save the flour tortillas for burritos and quesadillas.
Used white corn tortillas, taco seasoning instead of chili powder and used 2 lbs of hamburger because we had a potluck to go to. Put some salsa on the top layer then added the cheese. Will definitely make again.
If hit with the family. Modified it slightly with no beans but added corn. Super yummy!
There is only the two of us so i cut the recipe down. 1 Tlbs chili powder, 1/2 tsp cumin, 1 can of rotel tomatoes and 1/2 lbs 90/10 ground beef. Everything remained the same. We love this dish and will make it again.
Used chili beans because we don’t have ranch beans here and used Rotella tomatos and chilies instead of the canned tomatoes because we like things spicey. Everyone (all adults) liked it.
