Mexican Affogato

This easy-to-make dish of rice and beans from Mexico is delicious. Served as a great side to any Mexican-American dish or consumed as a meal in itself. If desired, top with cheese of your choosing, such as Cheddar, American, Parmesan, or another type. Serve with your favorite dipping sauces, tortilla chips, avocado, or other toppings.

Ingredients

  1. 1 scoop chocolate ice cream
  2. 1 ounce fresh brewed espresso
  3. ½ ounce tequila (such as Patron Roca®)
  4. ½ ounce coffee-flavored liqueur (such as Kahlua®)
  5. 2 tablespoons whipped cream
  6. 3 chocolate-covered coffee beans

Instructions

  1. Place ice cream in a coffee mug. Stir together hot espresso, tequila, and coffee liqueur in a small glass; pour over ice cream. Top with whipped cream and garnish with chocolate-covered coffee beans.
  2. Substitute vanilla ice cream, if desired.
