Lime Shrimp Tacos with Mango Salsa

A delicious summer dish with lots of flavors you’ll love is lime shrimp tacos. If you use little oil or butter, it might be low in fat. If you’d like, you can also include cheese and sour cream.

Ingredients

  1. 1 pound cooked small shrimp
  2. 1 tablespoon olive oil, or to taste
  3. 3 cloves garlic, minced
  4. salt to taste
  5. 2 tomatoes, diced
  6. 1 mango, diced
  7. 1 avocado, diced
  8. ½ green bell pepper, diced
  9. 3 tablespoons lime juice
  10. 1 green chile pepper, diced
  11. 1 teaspoon white sugar
  12. 2 cups chopped fresh cilantro
  13. ¼ cup tequila (Optional)
  14. 3 tablespoons lime juice
  15. 12 warm corn tortillas, or as needed

Instructions

  1. Combine shrimp, olive oil, garlic, and salt in a bowl. Let sit while you prepare the salsa.
  2. Combine tomatoes, mango, avocado, bell pepper, 3 tablespoons lime juice, chile pepper, and sugar in a bowl. Mix until salsa is evenly combined.
  3. Heat a large skillet over medium heat. Add shrimp; cook and stir until moisture evaporates, 3 to 5 minutes. Stir in cilantro, tequila, and 3 tablespoons lime juice.
  4. Serve hot shrimp and salsa over corn tortillas.
  5. If you decide to cook the shrimp in butter, it actually turns out delicious, full of zesty cilantro buttery deliciousness!

Good recipe but use large shrimp and cut them up. Larger shrimp have more flavor.

Made as written except that I left out the sugar and this turned out good. It was fast, easy, and would be perfect on a hot summer day. The only change I’ll make next time is to use raw shrimp and cook them on the grill. The salsa goes really good with the shrimp. This is a keeper!
