Kalbi (Korean BBQ Short Ribs): Authentic Recipe

I tried a lot of homemade Korean BBQ recipes before finding a terrific one from a buddy who got it from his mother. Because of the Coke®, it is highly supple and has a variety of flavors. I simply swap out the onions with sliced bulbs while making bulgogi using the same recipe for Dae Ji Bool Gogi (Spicy Pork).

Ingredients

  1. ¾ cup cola-flavored carbonated beverage (such as Coca-Cola®)
  2. ¼ cup white sugar
  3. ¼ cup soy sauce
  4. ¼ cup water
  5. 2 green onions, chopped
  6. 3 tablespoons sesame oil
  7. 1 tablespoon minced garlic
  8. 1 ½ teaspoons sesame seeds
  9. 1 teaspoon ground black pepper
  10. 2 pounds short ribs

Instructions

  1. Combine cola beverage, white sugar, soy sauce, water, green onions, sesame oil, garlic, sesame seeds, and black pepper in a bowl until marinade is well-mixed.
  2. Place short ribs in a resealable plastic bag and pour in marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for at least 2 hours.
  3. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove short ribs from marinade, discarding marinade.
  4. Cook short ribs until browned and cooked to desired doneness, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  5. Add red chili paste, or sambal, to make it a bit spicy.

This is the exact recipe my Aunt Kaunja would make me as a child. The very best Korean BBQ ever! We used it on beef, pork, and chicken and over rice and tofu. So yummy!

I used a pretty thick boneless short rib instead of korean style cut. Marinated for 4-5 hours. The marinade gives a good flavor and the ribs were tender indeed. My only complaint was that I wish the ribs had more of the marinade flavor! Maybe using the thinner cut will prove to be more flavorful. I will definitely be teying this again when I find some. Great share!
