Although kalbi is a cornerstone of exquisite Korean cuisine, eating it out is too pricey. Your visitors will be begging for more after seeing how easy it is to create at home. Marinating time is included in the total. It is typically served sliced, rolled in romaine lettuce leaves, and accompanied by white rice, gochujang (Korean red pepper paste), and slices of lightly roasted garlic.

Ingredients

  1. ¾ cup soy sauce
  2. ¾ cup brown sugar
  3. ¾ cup water
  4. 2 green onions, chopped
  5. 1 garlic clove, minced
  6. 1 tablespoon Asian (toasted) sesame oil
  7. 2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Instructions

  1. Stir together soy sauce, brown sugar, water, green onions, garlic, and sesame oil in a bowl until sugar has dissolved.
  2. Place ribs in a large resealable plastic bag. Pour marinade over ribs. Seal the bag and refrigerate for 3 hours to overnight.
  3. Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  4. Remove ribs from the bag; shake off excess marinade and discard marinade. Grill ribs on the preheated grill until meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.

Wanted to find something flavorful and easy. Original was too sweet for me, so I cut the sugar to a little less than 1/2 cup of sugar and cut the water to 1/2 cup. Also, I use half a bulb of garlic. Ppl rave whenever I make this. I may use soda next time, like 7-up or even Coke, and add 3/4 cup of blended onion.

Not bad, it’s simple and tastes great. Get a good char to make it just like the restaurants. For me, I used an oven, 400 degrees with 15 minutes on each side and 10 on broil (about 450 degrees). I also left a lot of marinade in the pan, so times may vary.

Very good basic Kalbi recipe that is no frills and has most of the important ingredients listed, and none of the extraneous niche ones that you might not have around or are hard to find. My only notes are that adding toasted sesame seeds to the marinade to taste is a good idea, and that many soy sauces (that aren’t reduced sodium) are too salty, so it’s usually good to dilute the soy sauce with more water before adding it. Maybe even as high as a 1 to 1 ratio of soy sauce to water.

Followed directions with no changes. Marinated for 8 hrs and grilled. Next time will try reducing water and adding pineapple juice to the marinade as some suggested!!!

What’s not to love? Sugar & soy sauce – my boy’s favorite. I found some short ribs at Costco – the smallest pack was 4 lbs. They were on the thin side but we just grilled a little less time. With 4 lbs we only had 3 ribs left! (2 teen boys, husband & myself) Marinated overnight, grilled & served – delish!

Great recipe. Followed the marinade recipe exactly. Marinated over night and smoked them at 250 for 2 1/2 hours. So good I made a short rib omelette the next morning.

Very good recipe. I used low sodium soy sauce- it wasn’t salty enough for me so next time I’ll use regular soy sauce. I also cooked in a crock pot – next time I’ll use a grill. Very tasty!

I was missing the pear and the rice wine, I used moscato instead. Tasted delicious although I burned some while grilling. The oil in the meat caught on fire too much so I had to take them off and just put 3 pieces at a time on my little Weber grill. Anyway it was yummy!

this was really good! I made it exactly as written. I used a less expensive cut if neat, sliced it into bite sized pieces, marinated overnight then stir fried on high heat until the marinade was Carmelized. I doubled the recipe and cut up potatoes and used the rest of the sauce to cook it.

It’s bit salty and too much sauce for 2 lbs of meat. I make Korean BBQ Ribs quite a bit and meat does not need to be floating in sauce. I recommend adding more green onions, garlic and sesame oil and blending them together in a blender or hand held blender. Also, as suggested by another reviewer, instead of water, add either Saki or Rice Wine (unsweetened) – it’ll help tenderize the meat. Be sure to taste the sauce before adding to the meat to make sure you it’s to your liking.
