Ingredients
- 3 zucchini
- 1 tablespoon salt, or more as needed
- 1 pound ground turkey
- ½ teaspoon garlic salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
- ¼ teaspoon red pepper flakes
- 1 teaspoon olive oil
- 1 teaspoon minced garlic
- 1 (14.5 ounce) can diced tomatoes
- 1 (3 ounce) can tomato paste
- 2 tablespoons balsamic vinegar
- 2 teaspoons dried parsley
- 1 teaspoon dried basil
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup small-curd cottage cheese
- 1 cup shredded mozzarella cheese
Instructions
- Make zucchini noodles using a spiralizer or julienne peeler. Place noodles in a colander and cover liberally with 1 tablespoon salt. Let sit until noodles release some moisture, about 20 minutes. Rinse noodles and pat dry.
- Place ground turkey, garlic salt, garlic powder, onion powder, cayenne pepper, and red pepper flakes in a large oven-safe skillet over medium heat. Cook and stir until turkey is browned and juices run clear, about 5 minutes. Drain grease.
- Push turkey to the sides of the skillet to make an empty space in the center. Add olive oil and minced garlic; cook until garlic is fragrant, about 1 minute.
- Preheat oven to 400 degrees F (200 degrees C).
- Stir diced tomatoes, tomato paste, balsamic vinegar, parsley, basil, Italian seasoning, 1/2 teaspoon salt, and black pepper into the skillet. Bring to a boil; cook until sauce thickens, about 15 minutes. Stir in noodles. Cover with cottage cheese. Sprinkle mozzarella cheese evenly on top.
- Bake in the preheated oven until cheese is melted, about 15 minutes. Turn on broiler and broil until cheese is golden brown, about 2 minutes. Remove from oven and let sit for 5 to 10 minutes before serving.
- Ricotta cheese can be used in the place of cottage cheese, and ground beef or ground chicken can replace the ground turkey if desired. Substitute 1 tablespoon chopped fresh basil for the dried if preferred.
- A jar of spaghetti sauce can also be used in the place of the tomatoes, tomato paste, and spices to speed things up, but I don’t feel that it’s quite as good.

I have been an Allrecipes member since 2011, annd have downloaded thousands of recipes, but I’ve never felt compelled to rate a recipe, until now. This was AMAZING!! So delicious and so easy!! I followed it exactly (which is rare for me!), and it was awesome! Even my carnivorous husband loved it! The only tweak was that I omitted the 1/2 tsp salt, because I can always add it later. Being on Weight Watchers, I was able to use fat free ingredients, and enjoy a filling, delicious meal for about 2 Points. Thank you so much for the recipe!! I can’t wait for leftovers tonight!!
This turned out really good. My hubby and son really liked it as well. I used 4 zucchinis, hot italian sausage and jarred pasta sauce and a can of diced tomatoes. I also added some tiny Amish egg noodles to make it a little more hardy for my hubby. I would for sure make this again and again.

I only added a small can of tomato because it looked too dry. turns out the zucchini produces some water even though I did use salt like the recipe said. But the extra sauce I added turned out fine. Will definitely make this again.
Very good! Used diced compare tomatoes instead of he canned diced diced tomatoes. Served with ciabatta bread which served as a great way to capture the delicious sauce.
Quite tasty! My turkey on hand was seasoned which gave this dish a little extra spice. Squeeze out as much water as possible from the zucchini.

This was pretty easy and my husband and teen girls loved it. It was even better the next day. The salting and patting of the noodles is time consuming, may try skipping the salting next time. As for saltiness, it was plenty salty, but none of us felt it was too salty. Great way to get more veggies in, and hubby needs to watch blood sugar, so I’ll definitely make it again.
Turned out great, but next time I’ll cut out the Tbsp of salt on the zoodles & dry them in paper towels instead.

I was surprised at how much the zucchini shrunk up after the salting process. That really kept them from getting mushy. Everyone loved this dish and I will definitely make it again. The only change that I made was omitting the red pepper flakes.
I used low fat ground pork, it was what I had. Everything else as written in this recipe. I imagine it is great with the turkey or ground beef as well. This is delicious! A keeper and rated going in my cookbook binder!

Sorry, way too salty. I should have listened to the other reviewers and reduced the salt by half or more and season to taste. I ended up adding another can of diced tomatoes and tons of sugar to even out the saltiness, it didn’t work. I am using this as a sauce on top of regular noodles and I still find it too salty.
this is soooo GOOD! a bit liquid because of the zucchini. make sure to let them sit for the full time because I cut it short. 5 STARS!
Thought the flavor in this was really good (although my son age 13 wasn’t a big fan). I used 2 packages of 10 oz zoodles and I don’t think that was enough. Next time I will have to buy more or actually spiralize them myself. I was nervous only using diced tomatoes and not adding any tomato sauce but it turned out good. I decided to use beef instead of the turkey and only 1 Tbs. of balsamic vinegar for our taste. Added a little diced onion while cooking the beef. I will make this again and my son can eat PB&J!
I like all the ingredients this recipe calls for and thought I would love it, but I didn’t care for all the flavors and will not make it again.
It was fabulous! Whole family loved it! Even heated up well for leftovers. After letting it sit with salt on it in the colander, I used a towel to squeeze out as much liquid as possible before putting it in the pan.
Made sure to use no salt added stuff when I could and added more cheese. This was my first foray into zoodles, and it turned out delicious. Will definitely make again.
