Ingredients

  1. 1 teaspoon ground black pepper
  2. 1 teaspoon dried parsley
  3. 1 teaspoon Italian-style seasoning
  4. ½ teaspoon garlic powder
  5. ⅛ teaspoon crushed red pepper flakes
  6. ¾ teaspoon crushed anise seeds
  7. ½ teaspoon paprika
  8. ½ teaspoon dried minced onion
  9. 2 teaspoons salt
  10. 2 pounds ground pork

Instructions

  1. In a small bowl, combine the ground black pepper, parsley, Italian-style seasoning, garlic powder, crushed red pepper flakes, anise, paprika, minced onion flakes and salt; mix well.
  2. Place pork in a separate large bowl and add the spice mix to it. Mix this thoroughly with your hands.
  3. In a large skillet over medium high heat, saute the seasoned pork for 10 minutes, or until well browned and crumbly.

I wanted to make a healthier sausage. I followed the recipe except the meat. I ground some chicken breasts and pork tenderloin. I cooked it in the microwave using my stack cooker. This is the best sausage. The seasonings were perfect.

This is so good! I’ve made it into Italian burgers, meatballs with spaghetti, and more. It’s always a hit! The only alterations I make are to use ground beef instead of pork, omit the anise (since I don’t have it on usually), and cut back on the salt.

So much better than store bought sausage. I substituted fennel for the anise out of necessity and doubled the red pepper flakes out of preference. I used 90% lean ground pork and formed 2 ounce patties that we grilled. Will keep this recipe (and my changes) and try on pizza and in breakfast quiches. Delicious!
