Italian Escarole Pizza

I devised my own oyster stuffing because I could never find the perfect recipe, using bacon, onion, mushrooms, and oysters. It pairs wonderfully with grilled turkey.

Ingredients

  1. 1 (12 inch) individual ready made pizza crusts
  2. 1 tablespoon olive oil
  3. 1 cup pizza sauce
  4. 1 clove garlic, minced
  5. 5 leaves escarole, rinsed and dried
  6. 2 cups shredded mozzarella cheese
  7. salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Lightly brush pizza crust with olive oil. Spread with a thin layer of pizza sauce, and sprinkle with minced garlic. Remove thick stems from escarole, and arrange leaves over pizza. Cover with shredded mozzarella.
  3. Bake in preheated oven for 30 to 35 minutes, or until cheese is bubbly.
  4. Add any additional pizza toppings you like.

Simple and tasty! The footnotes mention to add any additional toppings you like. I added olives and mushrooms for me and because I was feeding my meat loving husband, I added Italian sausage for him. I used escarole and also another lettuce I have growing in my Aero Garden. This came together in a flash and it is one I will definitely make again.
