Instant Pot Linguine with Pesto and Peas

This spaghetti meal is created in the Instant Pot and is delicious and simple.

Ingredients

  1. 5 ½ cups water
  2. 1 (16 ounce) package linguine pasta
  3. 1 teaspoon salt
  4. 1 teaspoon dried parsley
  5. ½ teaspoon ground black pepper
  6. 4 cups frozen peas, thawed and drained
  7. 2 cups ricotta cheese
  8. ½ cup pesto sauce
  9. 4 tablespoons grated Parmesan cheese

Instructions

  1. Combine water, pasta, salt, parsley, and pepper in a multi-functional pressure cooker (such as Instant Pot). Seal lid. Select high pressure according to manufacturer’s instructions; set timer for 2 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Stir in peas, ricotta cheese, pesto, and Parmesan. Seal lid again and cook on high pressure for 1 minute, allowing 5 to 10 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method, about 5 minutes.

Full disclaimer: I made this on the stovetop as recommended by another reviewer. And also, we have to use gluten free pasta which could have changed the texture. Overall, this made way too much. Great for a church picnic, but not for feeding my family (of seven!) We had leftovers for daysssss. I would cut this in half. The flavor was pretty good, just subtle. I enjoyed it more than anyone else. It was a little dry, and while I added extra ingredients to sauce it up a bit, I never really achieved saucy pasta. Maybe that would have been different in the instant pot.

Definitely gelatinous. The Instapot burned the bottom of the noodles. But all in all the meal was delicious.

I made this and it turn out horrible. Still editable hunke of pasta and peas. O how I wish has a little pasta water to add to the glue mess! I will make it again but nex t time as stove top where I can control the pasta to just under firm and the add the cheese and peas. Total time will be about the same time. Never again will I do PASTA in a slow instant pot which I ok for the truly lazy cooks. Spend the time and make something great. Good cooking RonB PS if I could give this a 1/4 star it would be given.

I’d use a bit less water. But it did all evaporate at the end of the process. It tasted terrific. Was very easy to make.

Quick and easy to make, but I think it needs a little more salt and some garlic. Also, note that this will probably only work for 6 or 8 quart pots as it gets pretty full and froths a bit.
