Instant Pot® Chicken Taco Bowl

You don’t even need to tell your guests how simple it was for them to be impressed! Serve with raspberry sauce and chocolate ganache. I used recipes I found here on Allrecipes.com for chocolate ganache (by INGRIDEVOGEL) and raspberry sauce (by The_Tattooed_Chef). The cake is moistened by the raspberry sauce, which complements all that chocolate. These two dishes are both outstanding and very straightforward.

Ingredients

  1. cooking spray
  2. 1 ½ (14.5 ounce) cans chicken broth, divided
  3. 2 chicken breasts
  4. 1 (1.25 ounce) package taco seasoning
  5. 1 (15 ounce) can ranch-style beans, rinsed and drained
  6. 1 (15 ounce) can corn, drained
  7. 1 ½ cups salsa
  8. 1 ¼ cups uncooked brown rice

Instructions

  1. Spray the inside of a multi-functional pressure cooker (such as Instant Pot®) with cooking spray. Pour in 1/2 the chicken broth. Add chicken breasts; sprinkle with taco seasoning. Add beans, corn, salsa, and rice.
  2. Pour remaining broth into the pot, making sure rice is submerged. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 22 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, about 12 minutes.
  4. Carefully pull out chicken breasts; let rest on a cutting board. Fluff rice lightly to keep it from clumping together and cover with lid for 5 minutes more. Shred chicken with 2 forks in the meantime.
  5. Serve rice in bowls topped with shredded chicken.
  6. Substitute black or kidney beans for the ranch beans, if desired.
  7. I used frozen chicken breasts!

I wasn’t impressed with this recipe. There’s not nearly enough chicken and too much rice. Perhaps the cooking time is too much, but it was a gooey mess following the exact directions. Tastes okay, but visually very unappealing.

This is one of our easy go-to dinners when everyone is tired. My family loves the mixture of ingredients and the ease of preparation. I like to add some red pepper for zing, but the rest of the family prefers it as is.

I made this exactly as directed, but unfortunately we did not care for it. The method of putting everything into the Instant Pot to cook together made the flavors meld in an indistinguishable way. The texture was also not to our liking.
