Homemade Italian Sausage Patties

If you want Italian sausage, season some ground pork with this recipe and make your own.

Ingredients

  1. 1 ¾ teaspoons dried parsley
  2. 1 ¼ teaspoons salt
  3. 1 ½ teaspoons fennel seeds
  4. ¾ teaspoon ground black pepper
  5. ½ teaspoon garlic granules
  6. ½ teaspoon Italian seasoning
  7. ¼ teaspoon dried minced onion
  8. 1 pinch crushed red pepper flakes (Optional)
  9. 1 pound ground pork
  10. olive oil

Instructions

  1. Combine parsley, salt, fennel, black pepper, garlic, Italian seasoning, minced onion, and red pepper flakes in a spice grinder or mortar and pestle. Grind until all seasonings are finely crushed.
  2. Place pork in a large bowl and add seasoning mix. Mix with your hands until well combined. Roll into a log and slice into four 1/2-inch thick sausage patties.
  3. Heat oil in a skillet over medium heat and cook sausage patties for 4 minutes. Turn patties and finish cooking for 4 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C).
  4. If desired, stuff into sausage casings, and shape into links. Freeze until ready to use. Alternatively, cook sausage over medium-high heat in a skillet for immediate use.

All good , 2 1/4 lbs pork, I doubled all spices/ herbs, added 1/2 teaspoon fennel powder ,3 teaspoons fennel seeds and 3/4 teaspoons anise seeds , 3/4 teaspoon red flaked pepper. Fried a sample , added 1/4 teaspoon salt. Suits us!
