Ingredients

  1. 3 pounds baby back ribs, membranes removed
  2. ½ cup finely chopped onion
  3. ¼ cup olive oil
  4. ¼ cup fresh lemon juice
  5. ¼ cup chopped fresh oregano
  6. 1 tablespoon liquid honey
  7. 5 cloves garlic, minced
  8. 1 teaspoon kosher salt
  9. 1 teaspoon freshly ground black pepper
  10. cooking spray

Instructions

  1. Combine baby back ribs, onion, olive oil, lemon juice, oregano, honey, garlic, salt, and pepper in a large resealable plastic bag. Turn to ensure ribs are well coated.
  2. Marinate in the refrigerator, turning occasionally, 4 to 8 hours.
  3. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil; grease with cooking spray.
  4. Arrange ribs on the prepared baking sheet, leaving space between them.
  5. Bake in the preheated oven until browned, about 10 minutes. Reduce oven temperature to 300 degrees F (150 degrees C). Continue baking until ribs are tender, about 1 hour.
  6. You can substitute 2 tablespoons dried oregano for fresh if desired.

I used pork spare ribs instead and cooked the entire 5# rack. At the end I had cut half the rack into singles and placed the onions, garlic and oregano on top of each and turned up the heat to 425⁰ F for 10 additional minutes to brown slightly. I loved the flavors that was incorporated, especially the lemon. If your looking for something exciting and different…THIS is it! Enjoy!!

Fabulous!!!! Thank you for the recipe. I was not able to marinate for 4 hours , only 2 1/2 maybe 3 hours. Cooked at 400 for 15 minutes, covered with foil and upped the temp to 425 for 30 minutes, uncovered for an additional 15 minutes . The ribs were tender and tasty. I look forward to making them again , marinating for longer and baking pe the r eclipse. A definite keeper.
