Ingredients
- 1 ½ cups fresh lime juice, or to taste
- ¾ cup olive oil
- 6 cloves garlic, sliced
- 2 teaspoons salt
- 6 tablespoons dried oregano
- 2 (1 pound) pork tenderloins
Instructions
- Combine lime juice, olive oil, garlic, salt, and oregano in a large resealable plastic bag. Seal the bag and shake until well combined. Taste marinade for tartness: if too tart, add a little more oil; if not enough zing, add more lime juice. The garlic and salt flavors should also be noticeable, but not overpowering. Place tenderloins into the bag, seal, and turn to coat. Marinate in the refrigerator for 2 to 5 hours.
- Remove tenderloins from marinade and shake off excess. Discard remaining marinade.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Grill tenderloins on the preheated grill for 20 to 30 minutes, turning once, or to desired doneness. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

I did halve it and did one sixth of recipe marinade but it was great-took our barbecue the full 30 minutes. Easy, fast, and yummy.
This is a great combination! It does make a lot of marinade, so as one other person mentioned, only use use 1/3 of the marinade ingredients. I only made one 1-lb tenderloin so I actually used 1/6 of the recipe and it was PLENTY. I also only marinated for an hour, and baked the tenderloin with the marinade. Came out super moist and flavorful, the lime really comes through but the other ingredients still make it taste like a true Greek dish.

I have tried many pork loin recipes and this is, hands down, the best! My family loved it!! I followed others advice and used fresh onion and garlic. Baked in the over at 400 for 40 minutes. It was perfectly done.

The only deviation that I made form the recipe is that I gave it a really light brush of honey about 3 minutes before I pulled it off the grill. Highly recommend.

I don’t see why many rave about this. I used lemon juice instead of lime juice, but that was the only deviation from the recipe. I marinated it for about 7 hours and then grilled it. It had an overwhelming lemon flavor.

A good marinade to penetrate the meat. I only had one lime so reduced the rest of the ingredients to keep the proportions right..except the salt..kept that at 1 t. It was plenty to coat the tenderloin. It thawed in the marinade and since it was too cold to grill I braised it in an oven-proof skillet and finished it off in a 450 degree oven. I think if oregano doesn’t suit your taste, rosemary would work well instead.

This was delicious! Halved it like some suggested. I wasn’t prepared to grill so I seared it for 10 minutes and then cooked it in the oven at 400 for 30min. I also left some marinade and added some tomatoes to the dish half way through. When finished. I sliced it and laid it on a bed of salad with the marinade as a dressing with some tomatoes. Was so tender and flavorful. Will repeat!
So easy! I used three lemons and just eyeballed the other ingredients. Roasted in the oven at 350 for 45 minutes and it was perfection. Thank you!

Declicious. Used lemon juice instead of lime. Used leftovers cut up with peppers, onions and celery on top of rice and/or with tortillas and cheese. Amazing!
