These shish kebabs with Greek influences are a tasty alternative to typical grilled chicken. They taste great when accompanied by pita bread, tangy tzatziki, and a Greek salad. Chicken can be replaced with lamb, and there are other veggie versions available.

Ingredients
- ¼ cup olive oil
- ¼ cup lemon juice
- ¼ cup white vinegar
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces
- 6 wooden skewers
- 2 large green or red bell peppers, cut into 1-inch pieces
- 1 large onion, quartered and separated into pieces
- 12 cherry tomatoes
- 12 fresh mushrooms
Instructions
- Whisk together olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper in a large glass or ceramic bowl. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
- Meanwhile, soak wooden skewers in water for at least 30 minutes before use.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken from marinade and shake off excess liquid; discard remaining marinade. Alternately thread chicken with bell peppers, onion, tomatoes, and mushrooms onto the skewers.
- Cook skewers on the preheated grill, turning frequently, until nicely browned on all sides and chicken is no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I made the recipe as written. Very good. I think I might eliminate the vinegar, increase the lemon juice ad increase the oil oil next time.

Delicious! I made just a few changes. I substituted zucchini for the tomatoes. I left out the vinegar.(I followed the recipe that was in the Aug/September 2020 Allrecipes magazine which is slightly different on the spices than what is shown here. )I did not use skewers. Instead, I lined a baking sheet with foil and tossed everything on there together. We will definitely be making this again.
I really liked this recipe. Very bright and flavorful. Great on the grill. I served with a side of jasmine rice. Chicken was very tender. My family thought it was a little too lemony/vinegary, so I may reduce the acids for next time or try balance it with something sweet.

We used air fryer and probably needs about 5-7 mins less cooking time than we did, chicken got a bit dry
Excellent recipe. I marinated the chicken overnight and it was exceptionally tender. Other than that, I adhered to the recipe and loved it. Will definitely make it again!
I followed the marinade recipe closely using dried spices. In had one pound of chicken breasts. So, there was plenty of marinade. I only marinated the chicken for about 30 minutes. I did put the chicken on skewers on the grill along with mushrooms, green pepper and zucchini. The chicken and vegetables cooked quickly on a hot charcoal grill. I kept an eye on it so that nothing burned. I think this is delicious and I will definitely make this again. It’s a light, healthy meal and easy enough to put together. I really enjoyed this figure-fnriendly meal.
I substituted the chicken for beef and cooked it on the grill for only a few minutes. I made some cucumber sauce and with the pita cooked with olive oil on my griddle for a few minutes, it was as good as any open gyro I’ve had in any resturant! freezes well!
I liked it very much, but it was dry. So I served it on brown rice then I made the marinade for the chicken and poured it over the vegetables, meat and rice before serving. DELICIOUS!

My husband and I really enjoyed this marinade. We used basil instead of thyme. Also, we didnt use mushrooms, because I don’t like their texture. Ate it on greek flatbread with tzatziki, and it was great. Will definitely make again.
I followed the recipe and instructions, but would not make this again as I found it to be a little bland.
Great results! My family enjoyed it and that was a surprise because I have picky 12 yr old. I used dry herbs and it was fine. I perfer my meat well done, so I will adjust the cook time to 13-15 mins. I will make it again for Easter. Thank you and Happy Easter to you.
