Ingredients
- 10 tablespoons unsalted butter, divided
- 3 cups rolled oats
- 2 eggs
- ½ cup white sugar
- 1 teaspoon vanilla sugar
- 1 teaspoon baking powder
- 1 ½ cups finely chopped, pitted dates
Instructions
- Melt 9 tablespoons butter in a small saucepan over low heat; mix in oats. Remove from heat and let cool, about 20 minutes.
- Mix eggs, sugar, vanilla sugar, and baking powder together in a large bowl; stir in dates-oat mixture.
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with remaining 1 tablespoon butter.
- Use 2 teaspoons to place little mounds of oat-date mixture 2 inches apart onto the baking sheets.
- Bake in the preheated oven until lightly browned on the top and bottom, about 20 minutes.

SO EASY!
At several points I wondered if this would be a flop. Would they hold together without flour? Yes! Very good cookies, not overly sweet, and will be a nice addition to my Christmas cookie tray. I did have to substitute vanilla for vanilla sugar, and added a handful of chopped pecans (my family doesn’t think it is a cookie without nuts!). I got 36 cookies that baked in 10-12 minutes.
Made as directed. Was worried when I saw batter, that cookies would not hold together. They did, and were delicious. A healthy and low calorie cookie that tastes great. Only needed about 12 minutes to bake in my oven.
