With cauliflower, I’ve recently started experimenting and coming up with new ways to spice it up. This one is quite crunchy and has a kick. It’s enjoyable to place it there and surprise your guests as well!

Ingredients
- 8 ounces dry fettuccine pasta
- 3 cloves garlic
- ½ sweet onion, cut into wedges
- 3 tablespoons fresh oregano leaves
- 4 tablespoons olive oil
- 4 medium tomatoes, chopped
- 3 tablespoons chopped fresh basil
- salt and pepper to taste
- 1 cup spinach leaves
- 1 pound cooked shrimp – peeled and deveined
- 8 ounces fresh mozzarella cheese, diced
Instructions
- Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 minutes, or until tender. Drain.
- In the container of a food processor, combine the garlic, onion and oregano. Pulse until finely chopped. Heat the olive oil in a large skillet over medium heat. Add the onion mixture; cook and stir until fragrant and almost golden. Mix in the tomatoes, basil, salt and pepper. Simmer for about 5 minutes while the pasta is cooking, stirring occasionally.
- Mix in spinach until it wilts, then just before the pasta is done, stir in the shrimp. Cook until heated through. Toss with pasta in a large serving bowl, and mix in mozzarella cheese.

I made this recipe with all of the listed ingredients but I didn’t put the onions and garlic in the blender like the recipe stated. I chopped them finely, sautéed them and then put the rest of the ingredients in. Delicious! I’ve made it twice in the last two weeks. I do have to say that beefsteak tomatoes straight from the garden really make this dish.
We enjoyed it but felt it was a little bland. next time I will use a more flavorful cheese like goats cheese or a flavored parm or sheep’s milk cheese. We are also going to add some red pepper flakes
Good recipe but if I have to make additions I can’t give it 5 stars. I added a little pasta water because it was too dry and mozzarella is the wrong cheese. It left melty strings and was difficult to eat. Parmesan would have been better.
I made this recipe as written – it worked out great because I just happened to have all of the ingredients. This is a good recipe for leftover tomatoes from the garden. It had good flavor but could use a little zing. Next time I will add chili flakes or Old Bay Seasoning.
Good Shrimp recipe. A few minor changes. Not tomato season so I used cubed canned & drained them. Didn’t have basil and don’t like it anyway so just left that out. Some tender young kale instead of spinach & I just chopped the onion, garlic and oregano leaves. We both liked it. I’ll keep this one. Thank you, Lisa!
Very good recipe, I used precooked shrimp which I won’t use next time. I plan on using raw shrimp and cook them myself. It should impart more flavor. Thanks!

I made this recipe as written and it was ok. After reading the reviews that others left, I think I’ll try adding a little more garlic, some white wine, and hot pepper flakes when I try this recipe again. Thank you for the recipe.
It was great. However, it looked to me that the sauce was going to be thinner than I wanted it to be (before I added the cheese) so I added a small can of tomato paste.
Flavorful and simple. I used grape tomatoes instead of medium regular, and it worked exactly as I’d imagined, and I served it with tortellini. Hearty and filling without meat. Un sapore molto italiano.
It is soo good! I changed the noodles just because I like penne noodles. The flavors are delicious! Perfect beginner’s dish!
Although this is posted as a great summer meal, I would say that it was equally good for a winter dinner! I basically followed the recipe, except that I thawed some jumbo shrimp that I had in the freezer and used canned tomatoes (that I had preserved from my summer garden). I also used prepared pesto instead of fresh basil, added a pinch of cayenne pepper, and it made a delicious dish!

Really great, simple, fresh! I used canned diced tomatoes. Seasoned to taste instead of following the recipe to the letter. It made for a nice light summer dinner.
This was delicious and so fresh tasting, very summery. I had fresh basil and mozzarella but only dry oregano. I halved the recipe for the two of us and it was perfect! I added butter and a bit of broth at the end, as someone else suggested.
